Cooking Seafood

Seafood also lends itself to use in soups, stews, chowders and bisques.
Methods of preparing seafood also include non-cooking options such as such as seviche(ceviche) and sushi.
Cleaning Fish For The Table
Fish should be chilled on ice and laid out flat until cleaned. Once the fish is home, it should be rinsed thoroughly and cleaned properly.In some cases fish are scaled, rinsed, gutted and left whole. Otherwise the fish should be filleted.
Several filleting methods exist, each having its proper application.
Fsh can be scaled and the skin left on, filleted and then skinned or the skin can be cut around the perimeter of the fish and pulled off with pliers. The skin-on version is nice when baking or grilling smaller fish. Skinning the fish before filleting has some advantages, the most important being speed.
Filleting the fish and then cutting the skin off removes the most dark meat and leaves the highest quality portion, although some fish is lost in the process.

Chesapeake Bay Crab Cakes
1 lb. lump crabmeat
1 egg
2 slices shredded bread
1 teaspoon Old Bay seasoning
1/4 teaspoon. salt
1 tablespoon mayonnaise
1 tablespoon Worcestershire sauce
1 teaspoon mustard
1 teaspoon baking powder
Lightly beat the eggs, condiments and spices in small bowl and set aside.
In a large mixing bowl, combine the bread and crabmeat. Add the egg mixture and stir to combine. Fold in the crabmeat gently, trying not to break up the lumps. Mold the crab mixture into cakes and place on a baking sheet covered with waxed paper. Cover and refrigerate for at least 30 minutes or up to 4 hours.
Once chilled, fry in a hot skillet or broil at 350 F until brown.
Serve fried crab cakes immediately.
