Hope Springs Eternal, and crocuses are a big part of the reason! In spite of repeated snows and frost, crocuses survive brightly, poking delicate heads over their icy blanket.Â
Everyone seeks out the crocus as the first sign of spring and new life, after winter, especially this one, has been cold, dreary and miserable.
What a joy and a hope to see them!Â

The Crocus :: Incredibly Easy
Even if you have no green thumb!
Crocuses are a highly recommended bulb for beginners for a few reasons. First, they are extremely hardy. Even when you think your crocuses will freeze or die, they happily come back up each spring to give you encouragement, hope and a really deep sense of satisfaction.They are beautiful in color and shape, capturing light and sheen. You can blanket an entire ugly area with beautiful crocuses and transform the landscape.
There are many varieties, both spring and fall, that you can have something blooming in your yard from snow to snow.
Springtime Crocus Breakfast! Saffron Banana Muffins
Freshen up your mornings
One of the beautiful things about crocus is its saffron. Its flavor is exquisite! Plant some saffron crocus in your garden, and it will not only be a beautiful garden, but a healthy and useful one too! Pick the threads out of your fresh saffron crocus and use them with this terrific recipe!Take 1/4 tsp saffron threads and crush them with 1/2 cup white sugar.
Blend into the saffron sugar 1 tbsp heavy cream. Next mash two very ripe bananas and stir into mixture. Add an egg, 2 tbsp melted butter and 1/2 tsp lemon juice. When that is well blended, add these dry ingredients:
1 cup flour, 1/4 tsp baking soda, 1 tsp baking powder & 1/4 tsp salt
Preheat oven to 375 degrees. Line six muffin cups with papers. Spoon your batter into the muffin cups. Bake 18 to 20 minutes, or until a toothpick inserted into center of a muffin comes out clean. This will make 6-8 muffins.
