Seekh Kebab - Shish Kebab
We love eating kababs at home and whenever we go out for eating. There are many restaurants in our area where very good kebabs are served and in some restaurants they serve it directly on the charcoal with skewers and all. And according to your taste, you can let it cook more, make it more brown.
When there is a party at home, we love to include kebabs as a starter and it is a hit with all our guests too.
Kebab or Kababs first originated in Persia and then it was adopted in Middle East and Asia. Now Kababs have become part of our everyday cuisine and it is loved by one all.

Seekh Kababs with minced chicken
Basically Seekh in hindi means skewer, so kababs made using skewers is called Seekh Kabab, though you can have other forms of kababs as well. The main ingredient will remain same and there will be slight variation in the prepartion.
But kababs in any form is indeed a mouth watering dish.

Seekh Kababs are very tasty and at the same time, they can be made very quickly. It is an easy recipe which you can enjoy with your family any time of the day.
Ingredients
- Chicken Minched - 500 gm
- Egg - 1
- Onion -finely chopped - 1
- Green Chillies - finely chopped -(depends on how hot and spicy you want)
- Red Chili Powder - 1 tsp
- Ginger paste - 1 Tsp
- Garlic paste - 1 tsp
- Gram Masala - 3 tsp
- Lemon Juice- 1 tsp
- Salt to taste
Instructions
For Garnishing
Lemon Wedges, Onion slices and Chaat Masala
Method:
1. Mix all the ingredients in a bowl. Beat the egg before mixing in.
2. You can keep the mixture in a fridge for 30 minutes.
3. Now divide the mixture into balls.
4. With wet hands take the mixture ball and put on the skewer forming a 2-3 inch long kebab.
5. Put the skewers either in the tandoor or the grill and cook for 8 minutes.
6. Take the skewers out and baste them with some oil. Put it back into the tandoor for another 8-10 minutes. Check out if the Kababs are cooked properly or not. Keep rotating them so that they are not burnt on one side.
7. When done, remove the kababs from the skewers gently.
8. Serve hot on a platter sprinkled with some chaat masala and lemon wedges on the side. Green Mint Chutney goes very well with Kababs.
Add Breadcrumbs
Water content should be very less in making kakabs so make sure that you use dry herbs and spices. If the preparation is looking watery, try adding breadcrumbs.

For those who are vegetarian, you can enjoy vegetable seekh Kabab, just replace the chicken/meat with your choice of vegetables. You can use boiled and mashed potatoes, carrot, green peas, and french beans and other vegetables of your choice. Follow the Kebab recipe process as it is.You can enjoy the vegetable seekh Kabab with any sauce of your choice.

Mint Chutney
Serve mint chutney with your Kebabs!
Mint and Cilantro Chutney
Green Chutney
Ingredients:Mint: 1/4 cup
Cilantro : 1 cup
Garlic : 3 cloves
Grated Onion : 2 tbsp;
Green Chilies : 3 nos (you can vary them as per you liking)
Yogurt : 3 tbsp;
Cumin Seeds Powder : 1tsp;
Salt to taste
Lemon Juice : 1 tbsp
Process :
Mix all the ingredients together and grind them in a grinder. You can put some water if you feel that the paste is very thick. Grind the ingredients to form a smooth paste. After that put salt and lime juice as per your liking. I like my green chutneys hot so after taking it out for children, I put more green chilies.

Traditionally seekh kababs are roasted in a tandoor or in the oven. But if you do not have a tandoor or an oven and want to enjoy the kabab recipe, you can always use the easy way out. Deep fry the Kababs. Yes you can fry them in a wok using oil and the kabab tastes equally good.
