The better quality chocolate you use, the better the result will be. Use cheap grocery store chocolate - and it will taste like cheap grocery store chocolate. You need good quality containing a large amount of cocoa butter to produce a rich creamy flow. Flavored chocolate brings an interesting twist to the idea, but obviously any chocolate with bits in it (eg nuts) is not going to work.
