Serbian Tomato Salad

When it's hot and you've got extra tomatoes, make Serbian Tomato Salad
As I write this, the daytime temperatures outside are in the triple digits and it doesn't cool off much under the seventies at night. That means it's so hot without air conditioning that one barely feels like eating, let alone cooking. It's the weather for sandwiches and Serbian Tomato Salad -- especially if your garden has left you with a lot of yummy fresh tomatoes to use.
For this salad you will need fresh tomatoes -- enough to feed your family. The amounts I'm using are enough for about two generous servings. You will also need about 1/4 cup sliced green onions (about three) or the same amount of chopped red onion. You will also need one small sweet bell pepper or half a large one, some canola or olive oil, and some red wine vinegar. That's all. Double these quantities to feed four, triple for six, and so on.

Slice the green onions with a sharp knife
Or chop the red onion in small pieces.

Set aside what you have cut into a bowl that will fit the amount you plan to make.
Dice the sweet bell pepper and add to the bowl.
My bowl holds a quart, leaving enough room to stir without spilling over the edges.

Wash, dry, and dice your tomatoes.

My tomatoes made about two cups diced. You can use more. Your amounts of any ingredient can conform to what you have available. Use more or less green peppers and onions according to what your family enjoys. Same with the amount of oil and vinegar. Add your diced tomatoes to the bowl.
Drizzle about 1 Tablespoon oil over top and stir well to coat all the vegetables.

Then drizzle the vinegar (about 1/2 T) over that.
Mix well again. You might want to sprinkle garlic salt to taste over it before stirring. I used to do that, but I don't now. Hubby is on a low sodium diet (except when he eats chips and salted peanuts and restaurant food. Only salt I put in things seems to count.)
Your Serbian Salad is now ready to eat.

This salad does not need to be reserved for hot days. Make it anytime you have fresh, juicy, ripe tomatoes. It's really beautiful if you happen to have a lot of different colored heirlooms. I didn't this time around.
This salad is good to take on picnics and serve with grilled foods. It also makes a nice accompaniment to egg sandwiches, quiche, and other egg or cheese dishes. For a really quick meal, serve it with an omelet or scrambled eggs and bread. I'm a great believer in meals that can be put together fast, since my schedule is often unpredictable.

- Your Serbian Tomato Salad is just plain healthy good and would be wonderful with just some fresh bread. I like how you let the salad change by what is available. Those recipes passed down by "Mom" are sure to please!

- Thanks for stopping by. I'd better not mention the feta to my husband or he will add more calories than he needs. This was his mother's recipe. I have also substituted white or red onion on occasion --whatever I have on hand. Otherwise I try not to mess too much with "the way my (his)mother made it"

- Great recipe...only you forgot (at least in my book) the MOST IMPORTANT ingredient: FETA CHEESE! Also, many Serbs will substitute white onion in place of the green onion, but that's all based on taste and/or what's available. Otherwise, just add a side of bread and you're good to go.
