Why bake a cake?

I would like to introduce you to the joys of baking your own cakes. Many people I have spoken to about baking cakes say they cannot bake cakes or it is easier and cheaper to buy them. Everyone can bake a cake, so it might not be perfect but as the saying goes practice makes perfect! It may be easier to pick a cake up off the shelf and cheaper, however it does not have that homemade taste and is full of additives. So I would like to share with you this simple, easy and tasty Coffee and Walnut cake recipe, and share the joy's of home baking. Lets get baking!

It's all in the mixing

The essence to making a great sponge is all in the mixing. Beating the mixture to death will result in a hard flat sponge. Cooking is just like science hence why it used to be called domestic science at school. Adhere to the method in any recipe, adding in the order it states and doing exactly what it tells you and you can't go wrong. There is no room for 'oh that will do' or 'that's near enough', as by doing this will end in poor results. If you are not a confident cook, then next time when you have some spare time and you are in no hurry, shoo everyone out of the kitchen and put on your favorite tunes and get baking!

What do you do?

When talking to people about baking cakes they usually fall into two groups; those that can and those that can't bake cakes. It seems to be a do or die thing. They have attempted to make a cake and feel that they have failed so give up. They either resort to buying them ready made or buy those packet mixes where you just add an egg, milk or water. I Like to make my cakes using my own ingredients as I don't think you can beat the taste and texture of a home made cake.

Victoria sponge cake

Victoria sponge with butter icing and lemon curd filling 

More flavors

To make any of the following sponges use the basic sponge recipe:
8oz butter/margarine
8oz castor sugar
8oz self raising flour
1 tsp baking powder
4 eggs

To make a Double chocolate sponge
add 2oz cocoa powder
for the butter icing
add 1oz of cocoa powder

To make a Lemon sponge:
add 1tsp of grated lemon rind
1 tsp lemon juice
1 dessert spoon lemon curd
for the butter icing
add 1 dessert spoon lemon juice

Classic Victoria sponge cake
use basic sponge mixture
add jam and butter icing for filling

It's me!

I'm married to Jay and have 4 growling lads whom all eat me out of house and home! I have 2 rambunctious Labrador's Max and Clyde and at present four hen's. I'm an avid amateur gardener and love growing my own vegetables. When I'm not in the garden or hiding in my potting shed, I'm usually in the kitchen as I love to cook and bake. For the first time ever I made chutney and jams with my homegrown produce. I enjoyed making it so much so I now have a cub-board full even though I gave lots to family and Friends. I live life to the full and take great pleasure in all that I do.

    My dog would tell you that coffee and walnut cake would be his favourite... if he was allowed it... but really it's one of my favourites :-) I have never baked one though, mine are usually shop bought, but I just might give this a try.
