It's all in the mixing
The essence to making a great sponge is all in the mixing. Beating the mixture to death will result in a hard flat sponge. Cooking is just like science hence why it used to be called domestic science at school. Adhere to the method in any recipe, adding in the order it states and doing exactly what it tells you and you can't go wrong. There is no room for 'oh that will do' or 'that's near enough', as by doing this will end in poor results. If you are not a confident cook, then next time when you have some spare time and you are in no hurry, shoo everyone out of the kitchen and put on your favorite tunes and get baking!

Kitchen Scales
Mixing Bowl
Sieve
Wooden Mixing Spoon
Metal Mixing Spoon
Small Bowl for mixing eggs

Round 8inch Cake tin x 2
Ingredients
- 8 oz soft margarine/butter
- 8 oz castor sugar
- 8 oz self-raising flour
- 4 eggs
- 1tsp bicarbonate of soda
- 1 dessert spoon Camp coffee
- 2 oz chopped walnuts
- BUTTER ICING INGREDIENTS
- 2 oz soft margarine/butter
- Icing sugar*
- 1 dessert spoon Camp coffee
- 10 walnut halves
Instructions
1) Grease and line 2 x 8" cake tins and set to one side
2) Crack the eggs into the small mixing bowl and beat together and put to one side
3) In the large mixing bowl add the margarine/butter and sugar and beat together with the wooden spoon
4) Add a third of the egg and beat in
5) Add another third of the egg and beat in
6) Add a dessert spoon of flour and the remaining egg and beat
7) Add the sifted flour, bicarbonate of soda, Camp coffee and chopped walnuts and using the metal spoon GENTLY mix together, making sure all the mixture is bound together
8) Divide the mixture between the 2 cake tins
9) Pop it in the middle of the oven gas 5 (190*c / 350*f) for 25 - 30 minutes
10) Take cakes out of the tins and place on a rack to cool
Once the cake has cooled you can then add the butter Icing.
How to make the butter icing
1) In a bowl add the margarine/butter and mix until soft
2) Gradually add the icing sugar and keep mixing until you have the right consistency that is creamy and soft
3) Add the Camp coffee and mix it in thoroughly.
4) Use a 3rd of the butter icing to put in between the 2 sponges
5) Spread the remainder on the top of the cake
6) Decorate with the walnut halves
7) ENJOY!
*NB I have not given a specific amount for this as it all depends on whether you use butter or margarine. Just keep adding the icing sugar until you have a soft spreadable mixture and you can just taste the butter/margarine.
Camp coffee is a thick coffee essence. If you cannot get hold of Camp coffee, then you can use any coffee essence or strong fresh brewed coffee.

What do you do?
When talking to people about baking cakes they usually fall into two groups; those that can and those that can't bake cakes. It seems to be a do or die thing. They have attempted to make a cake and feel that they have failed so give up. They either resort to buying them ready made or buy those packet mixes where you just add an egg, milk or water. I Like to make my cakes using my own ingredients as I don't think you can beat the taste and texture of a home made cake.

To make any of the following sponges use the basic sponge recipe:
8oz butter/margarine
8oz castor sugar
8oz self raising flour
1 tsp baking powder
4 eggs
To make a Double chocolate sponge
add 2oz cocoa powder
for the butter icing
add 1oz of cocoa powder
To make a Lemon sponge:
add 1tsp of grated lemon rind
1 tsp lemon juice
1 dessert spoon lemon curd
for the butter icing
add 1 dessert spoon lemon juice

I'm married to Jay and have 4 growling lads whom all eat me out of house and home! I have 2 rambunctious Labrador's Max and Clyde and at present four hen's. I'm an avid amateur gardener and love growing my own vegetables. When I'm not in the garden or hiding in my potting shed, I'm usually in the kitchen as I love to cook and bake. For the first time ever I made chutney and jams with my homegrown produce. I enjoyed making it so much so I now have a cub-board full even though I gave lots to family and Friends. I live life to the full and take great pleasure in all that I do.

- My dog would tell you that coffee and walnut cake would be his favourite... if he was allowed it... but really it's one of my favourites :-) I have never baked one though, mine are usually shop bought, but I just might give this a try.
