This recipe is really simple. I tend to make the filling on the day before so the flavors develop, or just make it when I have lots of vegetables that I need to use up and then freeze it for when I need it. You can make large batches of the samosa's and freeze them uncooked.
Ingredients
- Vegetable curry Samosa's
- 30 slices of stale bread
- 2 sweet potatoes
- 1 potato
- 2 carrots
- 1 onion
- 3 oz peas
- fresh or frozen
- 2 cloves garlic crushed
- pinch of salt
- pepper to taste
- 2 dessert spoons curry paste
- 1 pint of chicken or vegetable stock
- 1 teaspoon of sugar
Instructions
Using a chopper, chop the sweet potatoes, potato, carrots and onion and set to one side.
In a large pan add the knob of butter and heat
add the crushed garlic
add the chopped vegetables and cook until slightly soft
add the salt, pepper, curry paste and stock and gently simmer for an hour
Meanwhile using a rolling pin roll out each slice of bread to make it thinner and using a 3inch round cutter, cut out the center of each slice of bread
(do not throw away the rest of the bread, a great tip for using it up later)
one you have rolled out and cut the bread cover with a damp tea towel and set to one side
Once the vegetable has cooked you can begin to make the samosa's
get a circle of bread and put a teaspoon of the curry mixture in the center
dampen the edges and fold in half making a crescent
firm down the edges and continue until all the circles have been used
If you have any filling left over you can freeze until next time
You can either cook these in a deep fat fryer or a pan of oil
I use a wok
One the oil is hot put about 5 at a time in the oil and cook until light brown and crispy
continue until you have cooked them all
These are best when eaten hot or you can have them cold, mine never get the chance to get cold as the family all hover around whilst I am cooking them!

Since I'm incapable of cooking in batches smaller than "Enough to feed 12 hungry mountain ogres," we wind up with plenty of leftovers even after everyone has had their next-day nibbles. Compost! Back to the garden, to contribute to future ogre-sized meals!

more to bread than you think
We always have stale bread in the house, especially the crusts! My Husband insists on fresh bread everyday for his lunch and refuses to use the bread form the loaf that was used the day before. So I end up with 3 or 4 slices in several packets by the end of the week. I freeze mine and make use of it in my cooking.

Don't throw away the scraps!
What to do will that pile of scraps?
Well I usally make 2 things, crouton's and breadcrumbs
CROUTON'S
Cut all the crusts of at 1cm thick and cut into cubes
Put them in a large bowl
Sprinkle on 1 teaspoon of garlic salt
Sprinkle on 1 teaspoon of dried parsley
Add 1 tablespoon of olive oil
Mix together thoroughly
Spread on to a baking tray
Cook in the oven for approx 45 minutes to 1 hour
gas mark 2 (150*c/300*f)
Half way through the cooking time shake the tray to turn the cubes
cook until brown and crispy
These will keep for several months in an airtight container
Great served with soup, in salads or eaten as a snack
BREADCRUMBS
Place all the remaining scraps of bread in a food processor
Whiz until you have fine breadcrumbs
These can then be bagged and frozen for later use
Use in minced meat dishes to bulk them up
Use to make burgers
Use as a crumble topping
Use as a coating for chicken or fish

SAVORY
Curry - chicken, lamb, beef, pork, fish or vegetables
Chili - chicken, beef or vegetables
Cheesy vegetables
Savory mince
Cheese and onion
SWEET
Any stewed fruit
Apple, sultana and cinnamon
Mashed banana and chocolate
Raspberries and white chocolate
Strawberries and chocolate
Banana then dip in melted chocolate once cooked
Lemon curd
Sweet apple samosa's
