Sherry Trifle - it's so easy
Sherry Trifle is a dessert that you can change every time you do it. My main change is that I keep adding more and more sherry and I have been known to add a little brandy at Xmas - wonderful. You can vary the fruits that you use and toppings - it's so versatile.
I don't enjoy the packed Sherry Trifle that you can buy from the supermarket - all I can taste is sugar in these ones. I have been making my own for about 5 years now. I made one last weekend when our friends came around for a BBQ and they all asked me for the recipe, so I though I would make a lens and they can view it all on here, as can other fellow squidooers. Sherry Trifle - The Ingredients....
May Look a lot but Do You Want a Tasty Trifle ?

INGREDIENTS
6oz (175g) Self Raising Flour
Rounded teaspoon Baking Powder
3 large Eggs
6oz (175g) Caster Sugar
6oz (175g) Butter or Margerine at Room temperature
Vanilla Extract or Essence
Jar of Jam (good quality strawberry jam)
Frozen berries (you choose, but a mixed berry assortment works well)
Carton of Ready Made Custard
Whipping Cream
YOU WILL ALSO NEED
Non Stick Baking Paper
Cake Tin
Trifle Bowl
Electric Whisk (or a Handheld whisk and a strong man)
Mixing bowl
Sieve
Sherry Trifle - The Ingredients

Sherry Trifle - Making the Sponge.....
not just opening the packet...

1) Pre-heat oven to Gas Mark 3, 325F, 170C. Lightly grease and line the cake tin with non-stick baking paper
2) Sift flour and baking powder into a mixing bowl, holding the sieve quite high to give the flour a good airing
3) Break 3 eggs into the flour and add caster sugar and marg / butter
4) Add Vanilla essence or extract
5) Whisk everything together with an electri whisk or beg your hubby to do it for you with handheld one. You need to have a mixture that drops off the spoon easily when you give it a tap. If it is a littl stiff add 1-2 teaspoons of water and mix well
6) Pour the mixture into the cake tin
7) Place it in the centre of the oven and bake for 30-35 mins

Sherry Trifle - Soak the sponge........
Take a sip yourself...

8) When the sponge has cooled down, break it up using your hands into the bottom of the trifle bowl (about 2-3 inch diameter pieces, but really no hard fast ruling here)
9) Here comes the good bit, pour over the sherry and brandy. Now how much you use is completely up to you. You can just use sherry if you like. Sometimes I use just sherry and add just a tiny bit (good for when people driving home) or for a special indulgence I tend to add quite a bit of both sherry and brandy, mmmm.
The Trifle Debate

A lot of people only make a trifle at Xmas time - once a year. How often do you make a trifle ?

No, we can't get enough - we have it for breakfast, lunch and dinner.
Sherry Trifle - the fruit and jam....
good quality jam....

10) Place the frozen fruit ontop of the sponge - be generous
11) Put the jam ontop of the fruit - use a full jar
12) Pour the custard on the top
13) Place the bowl into the fridge for a couple of hours or overnight to allow it to set
