Shirataki Noodles- A Miracle Food

About a year ago I was an overweight college kid. I was quite unhappy with myself as a result. I started to research weight loss products, as you probably are right now. I found berries and all types of supplements that claimed I could lose weight. Finally I found this Noodles product that has ZERO calories. I was very interested in this product so I did even more research. I knew I needed to exercise but I also knew that diet was a huge part of weight loss. First I looked at my own diet and saw that pasta needed to get cut out. And I made a connection why couldn't I use this ZERO calorie noodle and supplement it for the pasta I was eating. I did just that. I switched my pasta meals with Shirataki noodle meals. I first tried it with spaghetti and meatballs my favorite meal. I was nervous but I tried shirataki noodles and meatballs, the meal came out phenomenal.

I was excited by this taste and started switching every pasta meal with these shirataki noodles, to help me lose weight. shirataki noodles with chicken parm, shirataki noodles with stir fry, I couldn't get enough of these noodles. I felt great eating them because I knew the nutrition facts and they didn't taste bad. Now I am down to 190 lbs a year later from 220, was it 100% due to the noodles NO! But it was a huge start.

Basically this lens is a tribute to the miracle food which helped me lose weight. I'll of course mention some health benefits, but I will also tell you where to buy the noodles, some great recipes, and discuss some of my favorite types/brands of shirataki.

I'm Italian, and I switched from Spaghetti and Meatballs to Shirataki Noodles and Meatballs!

Health Benefits of Shirataki Noodles

While we're not scientists, we have found many articles which have proven these how healthy shirataki is.

In one scientific article from the EFSA(European Food Safety Authority) some of their conclusions of Glucomannan, one of the main ingredients in the Shirataki were:

"On the basis of the data presented, the Panel concludes that: The food constituent, konjac mannan (glucomannan), which is the subject of the health claims, is sufficiently characterised.
Reduction of body weight (ID 854, 1556, 3725) The claimed effects are "weight management" and "contributes to weight management". The target population is assumed to be overweight subjects. Reduction of body weight is a beneficial physiological effect for overweight individuals. A cause and effect relationship has been established between the consumption of glucomannan and the reduction of body weight. The following wording reflects the scientific evidence: "Glucomannan contributes to the reduction of body weight in the context of an energy-restricted diet". In order to obtain the claimed effect, at least 3 g of glucomannan should be consumed daily in three doses of at least 1 g each, together with 1-2 glasses of water before meals, in the context of an energy-restricted diet. The target population is overweight adults."

Maintenance of normal blood cholesterol concentrations (ID 3100, 3217) The claimed effects are "helps to maintain physiological lipid levels in the blood" and "heart health". The target population is assumed to be the general population. A claim on glucomannan and the maintenance of normal blood cholesterol concentrations has already been assessed with a favourable outcome.

Types of Shirataki Noodles

The first product we recommend is the yam (Konjac) Shirataki noodles. These healthy noodles are made from a Japanese plant called the Konjac, or elephant yam. They are very high in fiber, and are the traditional type from Japan. They come in different varieties like fettuccini or angel hair. They often have zero calories per serving. It sounds too good to be true but it is. The black variety of these has only 10 calories per serving. These noodles are also nicknamed devils tongue noodles since the plant they are made of is nicknamed devils tongue.

The second product we recommend is the tofu shirataki noodles. These are becoming very popular in the USA currently, and are incredibly healthy. These diet noodles are perfect for anybody trying to lose weight! These noodles come in many varieties you already know such as angel hair, or fettuccini. They have a slightly different taste than the Konjac variety, however they taste incredible as well. Much of the health benefits are the same too!

Brands of Shirataki Noodles

There are many brands of Shirataki Noodles:

JFC- They make the brown and white noodles.
Matsuda- They have prepackaged ones with seasonings. They also make a high in fiber variety
So-Yah- Similar to Matsuda they have some pre-made ones like Shirataki Noodles with red vindaloo curry.
House Brand- This is an absolutely delicious brand of the noodles. They have a huge variety of different noodles for sale including white, black and tofu!

Miracle Noodle- This brand has a wide variety of different types like black, and white. They also make them in many different shapes like angel hair and fettuccine. You can find them here Miracle Noodle Website

Shirataki Noodles and Meatballs

This is the recipe that started me off on my quest. Its delicious!

Ingredients:
1 pound of ground beef or 1 package of the tri mix of meat beef pork veal ground up
2 eggs
Italian seasoning bread crumbs
Basil
Old hard bread
Grated cheese
1 bag Shirataki Noodles
2 can of fresh crushed tomatoes
1 can tomato paste
Cloves of garlic
Olive oil

Instructions:

1. Soak the hard bread in water to make soft, then squeeze out some of the water
2. Mix together the meat, eggs, bread crumbs , grated cheese, soaked bread, some basil
3. Stir this mixture together
4. Roll the meat into meat balls about an inch in circumference, if their 2 slimy due to the eggs add more meat
5. In a frying pan heat up olive oil
6. Put the meatballs in and fry them, not cooking fully
7. While this is occurring in a big pot add a small amount of olive oil brown some chopped up garlic cloves
8. Once they are brown add the can of tomato paste and cook this for about 3 minutes on medium heat
9. Then add the 2 cans of crushed tomatoes to the red sauce
10. Cook the red sauce on low
11. When the meatballs are done through some of the oil from the meat balls into the big pot of sauce this adds flavor, for less fat DO NOT DO THIS (put the meat balls on the side on paper towel to soak up the oil they were cooked in)
12. In the sauce add some salt, fresh basil leaves, pepper, and for spice some red pepper flakes
13. Once the sauce is boiling start to crush the tomatoes (continue to cook on low)
14. When you cook the shirataki noodles (follow the instructions on my video found here How to cook Shirataki Noodles add the meatballs to the sauce

Chicken Cacciatore and Shirataki Noodles

This is one of my favorite shirataki noodles recipes. Its adapted from my moms recipe. I had to ask special permission to even put this on the internet. I guarantee you will love it.

Ingredients:

Shirataki Noodles of your choice. You'll probably need about 1 bag of shirataki per person eating.
1 lbs of skinless chicken breasts and 1- 2 lbs of chicken parts thighs, legs etc
Salt and pepper to taste
1 red pepper
2 garlic cloves minced
½ cup of red wine(or slightly more if you want it to be sweet)
Fresh Basil
Olive oil
2 cans of tomatoes
1 bottle of red wine vinegar

Cooking it all:

1. Heat the oil in a frying pan and fry the chicken pieces until they are browned in the red wine vinegar and remove from the frying pan. This part can get tricky. You do not want to use to much of the vinegar at a time, but it evaporates fast so be on guard.
2. To a crock pot or a big pot add your olive oil and garlic. Let the garlic brown a bit.
3. Add the tomatoes, your basil, your red pepper, your salt and black pepper, and red wine along and let simmer for about 20 minutes. Then Crush your tomatoes.
4. Add the chicken and let cook on low heat for 2-4 hour. The reason I let it cook this long is to allow for the chicken to soften and the sauce to really get all of the flavors.
5. Cook your Shirataki Noodles by using the method in our video or by just rinsing them off and boiling for 2-3 minutes
6. Throw the noodles in the sauce to create the perfect dish enjoy !
Note: This dish has a very long cook time. Frying the chicken parts takes a lot longer than you would imagine since you are doing it in red wine vinegar. This is one of my families favorite recipes and I have personally cooked this a hundred times.

The best place to buy Shirataki Noodles is on www.AsianFoodGrocer.com. They have a wide variety of every type of Noodle! You can even buy them by the individual pack. This is definitely the place to go to try shirataki! This site has a much wider variety of the noodles than Miracle Noodles website, since it has a lot of smaller brands. They have every variety of House, Matsuda, So-Yah, and JFC. They have all of these in white, tofu, black, and many other varieties like cubes and cakes. They even have shirataki already mixed with seasonings that are easy to prepare such as curry or wasabi.

Another great thing about that site, is that they have a huge variety of other Asian products. They have all types of Japanese sauces and seasonings which are delicious on the noodles. Some examples are curry, chili sauce, and barbeque sauce when paired with a grilled meat.

You can also find these products on Miracle Noodles website. This is a great brand, and is certainly one of the largest ones for the noodles. If you are a fan of Shirataki like us, you should try these too. There not incredibly expensive either. They cost less than 4 dollars a pack. I found this site, and they claim to have had over one million sales. Why not give them a shot today? It's such a small investment; you cannot lose just by trying them today. Chicken Teriyaki and Shirataki Noodles

Ingredients:

.5 -1 lb of boneless chicken breast

1 red pepper and 1 yellow pepper

1 can of baby corn

2 cups broccoli floret

1 small onion diced up

.5-1 cup of your favorite teriyaki sauce

1 bag of Shirataki Noodles

2 tablespoons of cooking oil

Prep time- 15-30 minutes cook time-10-14 minutes overall time 25 - 40 minutes

Directions

  • Cut the raw chicken into small cubes, place them into a plastic bag and add ¼ cup of your favorite teriyaki sauce into the bag to let the chicken marinade. Let sit for 15-30 minutes.

  • While the chicken is soaking in the flavors, cut the peppers into strips, cut the broccoli, and dice the small onion up. (you can add any vegetables you like so you can cut the vegetables of your choice) Sometimes I use string beans, water chestnuts, and zucchini, go wild and mainly have fun.

  • Add the oil into large skillet or wok, and heat up. Once the oil is hot in 3-5 minutes add the cut up chicken into the skillet.

  • In a small pot start to boil water for the noodles. if you need help cooking the noodles watch our video on How to Cook Shirataki Noodles

  • Cook the chicken all the way thru (no longer pink) continuously moving the chicken in the pot. This should take 3-5 minutes

  • Once the chicken is done add the cut up vegetables into the pot along with the rest of the teriyaki sauce Cook vegetables until done this should take 4-7 minutes (cook on low flame)

  • Remember the water is still boiling! Put you weight loss noodles into the boiling water and cook for 2 minutes. After the 2 minutes strain the water and add the noodles to the large skillet/ wok

  • Once the veggies are done, your low fat meal is ready to be served.


  • Spice it up

    - If you want to spice up your meal add red pepper flakes, or even fresh jalapenos

    Shrimp Scampi and Shirataki Noodles

    Ingredients:

    2 -4 lbs of peeled shrimp
    Salt and pepper
    Olive oil
    2 cloves of garlic minced
    ½ cup white wine
    3 lemon squeezed into juice
    1/3-1/2 cup shrimp stock
    Shirataki Noodles
    2 -3 tablespoons of butter
    1 table spoon of parsley

    Cooking it all
    1. Take the shrimp and rub salt and pepper over the uncooked shrimp for seasoning
    2. Add oil to a skillet
    3. Once the oil is hot add the shrimp until they turn pink (DO NOT FULLY COOK THE SHRIMP)
    4. Remove the shrimp once pink
    5. Add garlic and brown the garlic in the oil for 30 seconds to a minute
    6. Add the lemon juice, white wine, and shrimp stock
    7. Reduce heat and let simmer for about 5 minutes
    8. Add the shrimp back into the pan, along with the butter
    9. Sprinkle the parsley on the shrimps and sauce
    10. Cook your shirataki noodles by rinsing them off for 2 minutes and then boil for 2-3 minutes
    11. Once the noodles are done add the sauce onto the noodles to create the perfect combination

    Fra Diavolo over Shirataki Noodles

    Ingredients

    5 bags of shirataki noodles
    4-10 lobster tails
    1 lbs shrimp
    5 lbs clams
    1-5 lbs king crab legs cut into 1/3 pieces
    4 cloves garlic minced
    Olive oil
    5 cans whole plum tomatoes
    Red pepper flakes
    Fresh basil
    Fresh parsley
    1 can of tomato paste
    Dave's total insanity hot sauce. Don't worry you won't be using much.
    Grated Cheese

    Cooking it all

    1. In a large pan add olive oil and your minced garlic, and brown the garlic
    2. Now add 1 can of tomato paste and cook on low heat
    3. After about 5 minutes add the 5 cans of whole plum tomatoes fresh basil, and fresh parsley
    4. Cook on low flame for about 20-30 minutes
    5. Once the tomatoes are soft enough use a power whisk and start to puree the tomatoes
    6. Once fully pureed, add red pepper flakes ( depending on your family add more for spicier)
    7. If you want it to be extremely spicy add a drop of Dave's hot sauce
    8. Cook this on low flames for 1 hour
    9. Start to boil water
    10. When the water is boiled cook your noodles. (Remember to have rinsed them first and only boil for 2-3 minutes)
    11. While your pasta is cooking add the king crab legs, lobster tails, clams, and shrimp and cook for about 5 minutes or until the fish is done
    12. Once the fish is cooked serve over the shirataki noodles
    13. Enjoy your fish dish!!

    Notes

    1. Add more peppers if you like it more spicy
    2. You can pick and choose which fish to add
    3. Substitute muscles for clams or use both!!
    4. If you want to help the people eating cut the lobster tails down the middle with scissors, and the king crab legs, this will create less mess and help your fellow eaters get their food with less work
