The Story of Aries

The constellation of Aries is named for the golden ram the goddess Hera sent to the aid of Phrixus and Helle, the two young children of Athamas, the king of Böeotia. Athamas tried to have them sacrificed when their mother Nephele fell out of love with him, but the golden ram came to their aid and carried them to safety. The Story of Taurus

There are several different theories as to which myth lies behind the constellation of Taurus, but the following is the one I have heard the most often.
