Silog - The Most Famous Filipino Breakfast
I want to share this dish with everyone, let them know how it is done and maybe at their twist in creating their own Silog dish.
There are actually three parts in the Silog dish, first is the main viand that comes with it, it can be a hotdog, fried beef, or fried pork. Next is the fried egg or itlog which is usually fried sunny side up. Then lastly, the fried rice or sinangang.
Tapsilog

Tapsilog Recipe
How to Cook the Tapa
- Serves: 8-10
- Prep Time: 30 minutes (excluding marination)
"Tap" stands for tapa or cured beef.
Ingredients
- Beef sirloin 1 kg
- 1 whole bulb of garlic
- minced finely
- 3/4 cup vinegar
- 1/4 cup white sugar
- 1 tbsp salt
- 1 tbsp ground pepper
- 1-2 tbsp. cooking oil
Instructions
1. Mix together the garlic, vinegar, white sugar, salt and ground pepper. This will serve as your marinade mix.
2. Add the beef, then let it stand for 30 minutes or you can marinate for about 1-2 days.
3. Fry the meat using 1-2 tbsp of cooking oil.
4. Serve with the fried eggs and fried rice.

Tosilog Recipe
How to Cook Tocino
"To" stands for tocino or cured pork.
Ingredients
- 1 kg. Pork Loin sliced 1/4 inch thick
- 175 grams sugar
- preferably brown
- 4 cloves garlic minced
- 2 tbsp salt
- 1/2 tsp red food coloring
- 5 tbsp soy sauce
Instructions
1. Combine all the ingredients, except the pork in a mixing bowl.
2. Press the mixture on both side of the Pork meat make sure that it is distributed evenly.
3. Pile the pork inside a container with cover and let it marinate inside the refrigerator for 2 to 3 days.
4. To cook, put a little water in the skillet, let it boil for a while, then fry the pork.

Longsilog Recipe
How to make the longganisa
"Long" stands for longganisa. Longganisa is also known as the Filipino sausage.
Ingredients
- 1 kg ground pork (include pork fat)
- 1 spoon salt
- 1 spoon brown sugar
- 1 spoon paprika
- 1/4 saltpeter(salitre)
- 1/2 teaspoon crushed laurel leaves
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon red peppers
- minced
- 4 cloves of garlic
- crushed then minced
- 1/4 cup vinegar
- 1/8 cup soy sauce
- Sausage casings
Instructions
1. In a big mixing bowl combine all ingredients except the sausage casings.
2. Mix well and let it stand for an hour.
3. Tie one end of the sausage casings then fill it with the ground pork mixture until the end of the casing then tie the casing.
4. Keep refrigerated for 2 to 3 days.
5. To cook, boil longganisa in 1/2 cup water in pan or wok. Let the oil ooze from the longganisa as the water dries out. Then fry it in its own oil while adding a few tablespoons of cooking oil. Continue to cook until the casings turns brown.
6. Serve with the fried rice and egg.

Hotsilog

Hotsilog Recipe
"Hot" stands for Hotdog.
Ingredients
- 2 pieces of american hotdog
- 1 tbsp olive oil
Instructions
1. Fry the american hotdog using the olive oil or cooking oil.
2. Serve with fried rice and egg.
Bangsilog
Bangsilog Recipe
"Bang" stands for bangus or milkfish.
Ingredients
- 2 medium size milkfish
- 6 cloves of garlic crushed
- 1 cup vinegar or kalamansi/lemon
- 1/2 tsp. ground black pepper
- 1 tsp salt
- olive oil
Instructions
1.Using a sharf knife, cut the milk fish from head to tail along the spine, open up and spread flat.
2. In a container mix the salt, garlic pepper and vinegar. Put the milk fish flat on the mixture. Make sure all parts of the milk fish are soaked.
3. Put inside the fridge overnight, you can also let it sun dry for 1-2 days to get the full flavor.
4. Fry in the skillet over medium frame, with the skin side first, then the turn over until it turn brown.
5. Serve with fried rice and egg.

Chicksilog

Chicksilog Recipe
"Chick" stands for Chicken or Filipino style fried chicken.
Ingredients
- 1 lb. chicken cut into serving pieces
- 1 cup buttermilk
- 1 to 2 tbsp salt
- 1 tsp pepper
- 1-1/2 cups all purpose flour
- 1 tsp garlic powder
- 1 tsp sweet paprika
- 1/4 tsp cayenne
- 1/2 tsp sugar
- salt and pepper
- 2 to 3 eggs
- oil for frying
Instructions
1. Combine buttermilk, salt and pepper in a large air tight container. Place the chicken pieces turning in to coat in the liquid. Cover and refrigerate for at least an hour or two or overnight.
2. In a large shallow platter, mix the flour, garlic powder, onion powder, paprika, cayenne and sugar until well blended. Season with salt and pepper.
3. In another bowl, beat eggs and season with salt and pepper.
4. Remove the chicken in the marinade mix then dip one at a time to the egg mixture. Then coat with the flour mixture.
5. Heat oil in the fryer, deep fry the chicken pieces.
6. Serve with the fried egg and fried rice.
Cornsilog

Cornsilog Recipe
"Corn" stands for Corned Beef.
Ingredients
- 1 can corned beef (your favorite brand)
- 3 cloves garlic
- minced
- 1 bulb of onion
- strips
- 1-2 pieces of potaotes
- cubed
- salt and pepper to taste
- 1-2 tbsp cooking oil
Instructions
1. Cut potatoes into cubes. Fry until slightly brown on the side, set aside.
2. Saute onion and garlic, add the corned beef. Then add the potatoes.
3. Add a little salt and pepper to taste.

Ingredients
- 6 cups rice steamed
- 3 tbsp garlic minced
- 2 tsp salt
- 3 tbsp cooking oil
Instructions
1. Combine Rice and Salt then mix well.
2. Heat the pan then pour the cooking oil.
3. Saute garlic until brown, and crispy in texture.
4. Add the rice, mix well until done.
5. Add fried garlic on top. Serve with friend Egg and you silog viand of your choice.
