Ideas & Recipes for a Healthy Breakfast

Rushing out the door and grabbing some quick breakfast in the form of a bagel or muffin is quite common. Unfortunately as much as I love bacon and eggs, none of these breakfast choices are ideal, as they are either too sugary and full of carbohydrates, or simply just too fatty.

Of course I'm not saying never to have a full English breakfast or any bread substance, I love those, but just to balance it out, and combine it with more healthy breakfast choices. Here is some simple breakfast recipes and ideas.

Standard Breakfast foods

The standard breakfast foods such as toast, bagels, pies, sugar cereals, muffins, muesli bars, donuts, waffles and pastries all taste great, but are often too sugary or contain nothing but empty carb calories. This will make you start the day with a high blood sugar level, and won't keep you full for long.

Fattier breakfast foods such as sausages, cheese bagels, bacon, sausages, hash browns and sausages, will sure keep you full for longer but contains too much fat, so what are we left with?

Luckily there are many other healthier options, so look for fiber and low fat dairy options, as well as Soy products and whole grain carbs.

I'm sure you can think of many more things, but here is a few ideas:

Healthy breakfast ideas

Breakfast recipes Fresh Fruit salad: Cut up some apples, oranges, pears, melons, bananas and add some berries or whatever your favorite fruits are.

Yogurt and berries: Get a low fat yogurt or soy yogurt and cut up some berries or other fruit. Add some healthy cereal (non sugary). Quick & Delicious.

Scrambled tofu: Although I love anything eggs, this is a healthier version. Chop some onions, bell peppers, carrots (or other veggies that you like) and quickly stir fry together with tofu using a small amount of olive oil. Add a little soy sauce and black pepper. Enjoy with rye bread or whole grain toast.

Broccoli & Eggs: Using egg whites are healthier than whole eggs, but both is fine in moderation. Scramble with a little olive oil and add chopped broccoli, onions and capsicum. You can also add wombok or beans. Season with black pepper. Serve with brown bread or whole grain toast.

Bircher Muesli recipe

Muesli with fruit and low fat milk is probably one of the easiest options to go for if you are in a hurry. Just make sure you buy a healthy non sugary version. However making your own may be even better.

A Swiss Bircher Muesli is one of the best ones I can think of. It just needs to be prepared the night before, and you have a healthy and delicious breakfast.

You can mix and match, I don't always add all the ingredients (or sometimes I add different types of berries such as raspberry and strawberry) but here's a standard Swiss Bircher Muesli recipe adapted from "Taste recipes"

Ingredients (serves 2)

1 apple
1 cup rolled oats
1/2 cup apple juice (125ml)
1/2 cup natural yogurt (130g) + another 1/2 cup to serve
Large pinch ground cinnamon
1/4 cup flaked almonds
1/4 cup walnuts (30g)
2 tbs pumpkin seeds
a few blueberries to serve

Method:

1) Remove core and grate the apple. Mix well with oats, yogurt, cinnamon and apple juice. Cover bowl and place in the fridge for 1 hour or overnight.

2) Combine nuts and pumpkin seeds in a small bowl.

3) If the muesli has been soaking overnight add a bit of extra yogurt (roughly 1/2 cup), and add half of the nut mixture. Stir well.
Top with the remaining nut mix and add blueberries. Serve & Enjoy

If the muesli has only soaked for an hour, only a little bit of yogurt is needed.
