Simple Chicken Recipes Make Dinner Happen
Problem is, when you get home from a long day, it's hard to get motivated to cook dinner. You probably don't know what to cook, and if you do, maybe you don't have all the ingredients you need.
Simple chicken recipes can change all that. Using basic ingredients you probably have in the house, and a few quick steps you can have you and your family back to the dinner table, eating healthy, saving money and getting to know one another again!
Mexican Chicken ~ A Simple Chicken Recipe that Tastes GREAT
This one is so simple. It would actually be a great recipe to let your kids help with, even toddlers will do great with this one.What you're gonna need:
preheat your oven to 375
4 chicken breasts (thawed)
pinch garlic powder
pinch cumin
salt and pepper to taste
1 cup salsa
1 cup shredded cheese (mexican mix, cheddar whatever you have on hand)
What you do:
Put the chicken breasts in a baking dish.
sprinkle with the spices, you can just shake them out of the jar (the kids would be great at this)
Add salsa to the top of the chicken
Add cheese on top of salsa
Bake for 40 minutes at 375.
It will come out bubbly, a little browned and absolutely delicious.
You can use bean/corn salsa if you like, and I just heated up some green beans and corn to go with it, but a salad would have been great too.

Roasted Chicken The Most Simple Chicken Recipe There Is!!
This is one of the easiest chicken recipes I know. It takes a while to cook, but the prep is very easy.What you need:
A whole chicken
spices you like (I use italian seasoning)
salt and pepper
What you do:
Preheat your oven to 400 degrees
rinse the chicken off inside and out, and dry it off with a paper towel.
Salt the chicken, basically sprinkle salt all over the chicken. Don't go crazy, but more than you think is right will be good.
Season the chicken. Just liberally sprinkle italian seasoning, or whatever spices you have chosen on your chicken.
Stick it in a baking dish. One closest to the size of your chicken is best.
Cook for 1 to 1.5 hours depending on the size of your bird. Make sure the juices run clear when you take it out. It should be 180 degrees on a meat thermometer.
Carve and serve.
This dish is beautiful, and can be served for family meals or even for company. I usually make up a noodle sidedish and broccoli to go with this, but the choices are pretty limitless.
