Simple Ideas for Frosting Cupcakes

Ingredients:

1/3 cup butter or marg.
3 cups icing sugar (confectioners sugar)
1 1/2 tsp. vanilla extract
1 to 2 drops of food coloring ( your choice of color)
Approx. 2 Tbsp. milk

Mix butter and sugar until well blended. Stir in the vanilla, milk and food coloring mix this until completely smooth and spreadable. If frosting is too thin adjust by adding a tbsp. of sugar at a time to get to the right consistency. Spread on cool cupcakes.

Fluffy Frosting

Ingredients:

1/3 cup of water
1 cup granulated sugar
2 egg whites

Add sugar and water to a small saucepan and heat to dissolve sugar. Bring to a boil and boil rapidly for 3 to 5 minutes without stirring. Watch closely as you do not want the syrupy mixture to change color as this spoils it. In small bowl beat egg whites until stiff. When syrup is ready pour in a thin stream into the egg whites as you continue beating. Do this until you have poured in all of the syrup, continue beating until stiff glossy peaks form. Icing should stand in stiff peaks. Add a drop of your choice of food colouring and beat in. Frost cooled cupcakes as desired.
