There's nothing like having a simple, basic omelette recipe on hand when hunger strikes and you don't have a lot of ingredients on hand.

If you want food now, don't fear! Omelettes have come to the rescue!

Omelettes make a quick, easy, delicious, and healthy meal any time of the day or night. Basically, all you need is eggs, but the more ingredients, the better! Read on for how to make tasty omelettes.

Oh, and if you aren't hungry yet, you will be!

Simple, Basic Omelette Recipe

How To Make a Simple Omelette

First, gather the necessary equipment:

  • A bowl or cup for mixing eggs
  • A fork or whisk for mixing eggs
  • A non-stick skillet
  • A spatula
Then, gather the ingredients for your simple omelette. You could make an omelette with just eggs, if you wanted to, but adding a few different ingredients will improve the omelette enormously. To keep this recipe basic, only cheese will be added at this time.

  • eggs (anywhere from two, for a small omelette, to four, for a large one-person omelette, or perhaps to share)
  • salt (sea salt is preferred)
  • pepper
  • milk (optional)
  • oil or butter (to prevent sticking)
  • grated cheese (optional)
Now comes the fun part - cooking the omelette!

  1. Stir the eggs, salt, and pepper together in a cup or bowl with a fork or whisk until you get a uniform, yellowy mixture. I like to add a splash of milk to my omelettes at this stage. Feel free to experiment.
  2. Heat your cooking surface to medium heat. Put the oil or butter into the frying pan and place the frying pan on the cooking surface. Spread the oil around, then pour in the egg mixture.
  3. Sprinkle the cheese across the cooking omelette. Here's where opinions differ as to cooking strategy. Some people simply shake the pan while the mixture cooks, and then put on a plate. Some people lift up the edges of the omelette to let egg run under, and when it solidifies on top, fold the omelette in thirds. If either of these methods leads to an omelette that is too runny on the top, feel free to flip the omelette once while cooking (although this requires some skill!) My favorite method is to flip the whole thing in the pan with a flip of the wrist. Fun, and easier than it looks, but requires courage!
  4. When omelette is done, place on a plate.
Your delicious omelette is ready to eat! Wasn't that easy? Serve as is, or with a salad, toast, or fruit.

The beauty of an omelette is that you can make it with just about anything. I will note, however, that a nice non-stick pan and a silicone spatula make the process much smoother.

Kick Your Omelette Up a Notch!

So you've gotten good at making the basic omelette. Now's the time to make it even tastier!

You'll need the same basic equipment (a bowl or cup for mixing eggs, fork or whisk, non-stick skillet, and spatula). You'll also need a knife and chopping board for the vegetables, and a plate with a paper towel to drain the bacon.

The ingredients are almost the same, with a few additions:

  • eggs (anywhere from two to four)
  • salt
  • pepper
  • milk (optional)
  • oil or butter (to prevent sticking)
  • grated cheese (optional)
  • kale, zucchini, spinach, or other vegetable(s) of your choice
  • garlic
  • bacon
  • feta
This is going to be the tastiest bacon, zucchini and feta omelette ever!

  1. Stir the eggs, salt, and pepper together until you get a uniform. Add a splash of milk if you like.
  2. Prepare the ingredients. I like to do this ahead of time, so that when the heat starts I can just throw things in. Take out the number of bacon strips you want; three or four is probably a good number. Chop the zucchini into small, bite-sized chunks; you'll want about a handful. Chop the garlic and put it aside.
  3. Heat your cooking surface to medium heat. Cook the bacon to the desired level of crispness (I like to keep mine chewy.) Take out the bacon and drain it. I like to cook my vegetables in the bacon fat (yum!) but you can discard this and use another type of oil if you want.
  4. Cook the vegetable(s) over medium heat with the garlic (everything is better with garlic). If you like a gentler garlic flavor, add the garlic to the pan first. If you like a stronger garlic flavor, add the garlic towards the end. Just make sure not to burn it! The veggies will be done when they just start to go soft.
  5. Take the zucchini out of the pan, and wipe down if necessary. Add more oil as needed, and put the egg mixture in the pan.
  6. Sprinkle the cheese across the cooking omelette. Cook the omelette as desired, using the instructions from above.
  7. When omelette is done, pour the zucchini mixture onto the omelette, then crush the bacon and sprinkle over. Fold the omelette in thirds over the contents. Alternately, if you had issues during the flipping stage, you could just pile all the different parts together on your plate. Still tasty!
  8. Sprinkle everything with feta cheese. Consume, and enjoy!
This is just one example of an omelette combination; there are literally thousands of others. Add any vegetables you choose at the vegetable stage, such as kale, spinach, tomatoes, onions, red peppers, etc. Use other types of meats, such as sausage or steak. Add the feta or other types of cheeses directly to the egg mixture, or melt them in the middle. Just use your imagination!
