- I've been a vegetarian for 24 years, and although I'm usually cooking for THREE (wife and daughter), there are times when I'm only cooking for myself, so this is a great lens!

- You might want to google "Chocolate covered blueberries" and order some to try. I think it's the Brookside ones I've had. Very addictive.

- The great thing about cooking meals for one, or at least learning to cook meals for one is that you can easily double or triple up and have enough for guests when they come over too.

- ..good lens.. I appreciate the difficulty in finding single serving vegetarian recipes. That's one of the reasons I wrote the eCookbook "30 Days of Easy Entrees for the Single Vegetarian."

- This is one of the most interesting healthy recipe guides I've found here on Squidoo. It's a challenge for singles (or the vegetarian person in a couple) to find good one-person meal ideas. What I especially like about your suggestions is that they are tempting but also not complicated to put together.

- Good resource. Some people assume vegetarians automatically have healthier eating habits -- not so.

- Well, son of a gun, I found this via the "explore related pages" link - first time user! I'm doing two lenses about my rotten eating habits as a single woman and my efforts to reform. I used to be a great cook but now that I'm alone I never use my kitchen knife. It's gotta change. Thanks for this.

- I became a vegetarian when I was barely out of my teens. I certainly didn't have a weight problem then. I don't think for me it has made a difference. I ate French fries pretty often in the early days, for instance. Vegetarian enough (if you don't question the fast food owner too closely about the origin of his fat or oil), but very bad for your weight. And all that chocolate I've eaten over the years... There was a time, and I was already a vegetarian, when I ate a whole bar of the stuff daily. Not very good for your health or your weight either.
Ultimately I don't think vegetarians automatically eat better than omnivores. It's HOW you eat vegetarian that does it. Just like it's how you eat meat (how much of it and combined with other stuff) that determines whether a person becomes overweight from that.
You know the drill: make sure there's plenty of fruit, vegetables and fibers in your diet.

- Katinka, have you found that being a vegetarian has helped you to maintain your weight over the years?

- Blueberries do grow in Europe, though I don't think they're native. I think of them as an American berry.

- Do blueberries grow in Europe, too??? Silly question but I feel like blueberries belong to my part of Canada...I raked them as a teenager for a couple of weeks every summer.
Great job on your lens, your restaurant sounds mighty tasty, chocolate bar and all. Blessed.

- Yes, soups are great - but for some reason I don't find myself eating them much. And no, I don't eat seafood either.

- As a person who sadly loves to eat, I must suggest soups are very good if you wish avoid meat but agreeable to use oils, eggs and maybe fish (seafood)?

- When I was single, my Friday Nights were a treat for me. I would stop by the deli and get a small amount of pepper cheese and some small rye bread slices, get some chocolate (I am very addicted to chocolate) rent some movies, usually scary ones, and I would camp in all weekend. I am lensrolling this over to Nutritional Eating Habits. Good work..and honestly, I cannot think of a better place than doing a review of your own kitchen.
