Slow-Cooker Zesty Pork Stew (or other meat) + Steven Wright

I did, so I figured that it was high time I pulled out that slow cooker (given to me as a gift, like 3 years ago) and give a stew my best shot.
Hey, even my man-servant was impressed. So, I decided that this recipe was worthy enough to share with you.
One thing I am famous for is not knowing the dietary customs of some of my friends (raised Roman Catholic, sorry). This time I decided to look up a few things. Please feel free to correct or educate me further about customs, cultures and religious practices regarding pork (or other stewing meat). I am fortunate to have friends and family from a wide range of cultures (and I hope I incorporated your needs into this recipe).
If you are entertaining for friends from all over the world and different cultures and wish to avoid putting your foot in your mouth like I have (foot-IN-mouth disease - ha), here are your 'need to know' points to consider (that I know of at the time of publish) when serving pork:
Pork is a well-known example of a non-kosher food so do not serve it to your Jewish friends, instead substitute a different kosher stewing meat (examples follow my intro).
Pork is also prohibited by the Islamic dietary laws. Throughout the world, many countries severely restrict the importation or consumption of pork products. Examples include: Iran, Mauritania, Oman, Qatar, Saudi Arabia, Kuwait, Pakistan and Maldives. Seventh-day Adventists, Rastafarians, and members of the Ethiopian Orthodox church also do not eat pork. I have many Jewish friends, so . . .
Kosher meat is from animals that have cloven (split) hooves and chew their cud, such as: cattle, sheep, goat, bison and deer.
Forbidden meats are pork, camel
and rabbit . . so no hasenpfeffer!

Hasenpfeffer is for real (a traditional German stew)
Also spelled hasenfeffer (hase is German for hare; pfeffer for pepper). Marinated hare is braised with onions & wine then is made into a stew.
Why I do not use raw, dry beans
Dry beans must be boiled prior to slow cooking to avoid poisoning.
In fact, some beans are five times more toxic when cooked at 175 F (80 C) than if eaten raw! Adequate pre-boiling is vital - this risk can be avoided entirely by using canned cooked beans at the end.
I do not add beans to my slow cooker recipes.
Slow Cooker Zesty Stew (gluten-free)
- Serves: 6
- Prep Time: 20 - 30 minutes
- Total Time: Cooks 8 - 10 hours
This recipe was derived from an advertisement for Sawmill Creek Chardonnay found on page 206 of the October 2011 edition of Canadian Living magazine.
I have modified it for gluten-free diets and also provided alternative ingredients for those who prefer to use a different stewing meat other than pork.
Ingredients
- 2 lbs. boneless pork shoulder blade roast OR 2 lbs. of stewing meat of your choice
- 1 tbsp. vegetable oil OR 1 tbsp. olive oil (esp. for red meat)
- 2 chopped onions
- 2 sweet potatoes (peeled & cubed) OR 1 sweet potato + 1 cup diced carrots
- 2 stalks of sliced celery
- 3 cups of gluten-free chicken stock (for pork or white meat) OR 2 cups of gluten-free beef / vegetable stock + 1 cup of red wine (for red meat)
- 2 tsp. dried thyme (gluten-free) & if using red meat add 1 tsp. of parsley/oregano + 1/2 tsp. rosemary (optional)
- 1 tsp. grated lemon rind (for pork or white meat) OR 2 tbsp. gluten-free tomato paste for red meat
- 1 tbsp. lemon juice (for pork or white meat only) OR 1 tbsp. gluten-free Worcestershire sauce (for red meat only)
- 3/4 tsp. salt
- 1/4 cup all-purpose gluten-free flour (I prefer Bob's Red Mill)
- 1 can (14 oz) artichoke hearts (rinsed & drained) - packed in water has less calories
- 2 cups frozen green beans OR I prefer frozen broccoli florets (greater nutrient value)
Instructions
Trim excess fat off of pork (or other stewing meat) and cut into 2 cm cubes (a bit smaller than 1-inch cubes).
In a large skillet, heat oil over med-high and brown meat in batches. Transfer meat to a slow cooker. Add onions, sweet potatoes/carrots, celery, stock, (wine if red meat), thyme, (parsley/oregano/rosemary if red meat), lemon rind and lemon juice OR tomato paste and gluten-free Worcestershire sauce if red meat, and salt to the slow cooker.
Cover and cook on low 8 - 10 hours or until meat and vegetables are tender.
Whisk gluten-free flour with 1 cup of water and add gradually to slow cooker, stirring occasionally. Add in artichoke hearts and green beans (or broccoli) and cook on high for 15 - 20 minutes or until slightly thickened and green beans (or broccoli) are tender.
Red meat & Worcestershire sauce
Orthodox Jews refrain from eating fish (anchovies) and meat in the same dish, so do not use traditional Worcestershire sauce in your red meat stew.

A great substitution for green beans is broccoli
and if you have lots of carrots, use them along with the sweet potatoes.

Reese artichoke hearts are perfect for this slow cooker recipe. Other ways to enjoy them are: sauteed over medium heat with butter and garlic, seasoned with salt, paprika and lemon juice. - Rose the suggestions you make here are very good and little known. The information concerning dry beans for instance is something of which I had no knowledge. I use a lot of beans in the winter, I thought I was very clever in not using canned beans or peas. I realize now that I should rethink that position! The Bugs Bunny cartoon is one that I remember well from my youth, I really love the Oscar winning Rabbit. The Stephen Wright jokes were very good. That guy always cracks me up. - Ummmm, very interesting information about boiling dry beans, I learned something new. Thanks for that valuable piece of information.
Thank goodness, I always boil my beans till the shells/skins (whatever it is) comes off. And, I end up with creamy beans, like gravy. The family loves them, they had better because "I Hate Cooking" anyway!

- Rose, you and Steven Wright are a dynamic combination for sure. You started me off with a belly laugh at the top of the slopes and then fascinated with your sensitivity and adaptations for cultural and religious diversity. Then you came up with an amazing recipe that make me want it now! I've been trying to figure out how to use some of those cans of artichokes my sister sent me...how cool is that!
