When I heard about the Atkins Diet I was the happiest person alive! What, you mean I can eat Blue Stilton cheese all day and all night and still lose weight? It sounded too good to be true!

In my expert cheese lover opinion, Blue Stilton cheese is the smelliest cheese ever. I remember the first time I smelt Blue Stilton cheese, I was working in a 5 star hotel (before I became a big-time record company producer). I was serving some socialite hotel guests dinner, for starters, they ordered (what appeared to me) smelly fungus on a plate. I thought to myself, these people must be CRAZY, how can they eat this smelly fungus cheese? Anyway, a few weeks later my tongue tasted this gourmet delight and to my huge surprise it tasted darn good! Especially placed in-between a fresh warm roll that's lightly coated with butter.

It is produced in two varieties: the well-known blue and the lesser-known white. Both have been granted the status of a protected designation of origin by the European Commission, together one of only seventeen British products to have such a designation. Only cheese produced in the three English counties of Derbyshire, Leicestershire, and Nottinghamshire - and made according to a strict code - may be called "Stilton". It is believed that the pioneer of blue Stilton was Cooper Thornhill, owner of the Bell Inn on the Great North Road, in the village of Stilton. Traditional legend has it that in 1730, Thornhill discovered a distinctive blue cheese while visiting a small farm near Melton Mowbray in rural Leicestershire - possibly in Wymondham, Leicestershire. He fell in love with the cheese and made a business arrangement that granted the Bell Inn exclusive marketing rights to blue Stilton.
