Most generally, when people consider ham, the first thing that comes to mind is "pig" or "hog". In reality, the term "ham" refers to the thigh and rump region of any meat-bearing animal (or quite possibly a really bad actor).

Varieties of Ham

In the United States, one of the most popular varieties of ham is the "Virginia" ham. Legally, for a ham to be called a Virginia ham, the hog must be raised in, and the ham must be produced in, the state of Virginia. Other types of ham include fresh ham, which is uncured, and country ham, which is uncooked and cured. The curing process flavors and preserves the meat. To cure the pork, the cut of meat is rubbed, soaked or injected with a blend of salt, sugar and nitrate. Smoking the meat is also a popular curing technique the gives the ham that distinct smoky flavor.

Ham is the thigh and rump of an animal, most commonly cut from the haunch of a pig or boar. Although it may be cooked and served fresh, most ham is cured in some fashion. Cuts referred to as ham in the U.S. are also called gammon in the U.K., South Africa, Isle of Man, and Ireland.

The United States largely inherited its traditions relating to ham and pork from 17th-century Britain and 18th-century France, the latter especially in Louisiana. The French often used wet cure processed hams that are the foundation stock of several modern dishes, like certain gumbos and sandwiches.
