My Favorite Smothered Chicken Recipe
My fabulous smothered chicken recipe can be altered to fit anyones taste,budget or cooking style, Young and old will like this dish. This dish comes out very tender and full of flavor. Your family will praise you for preparing such a delicious meal.
Smothered Chicken
This is one my family's favorite dishes.I do not have to call them twice for dinner.
First thing that I do is rinse off about 4 pounds of boneless,skinless chicken breast. I use an electric skillet so I spray a light coat of cooking spray on the pan to prevent sticking.Next I add chicken to medium to low heat skillet to cook slowly, if you prefer you can bake chicken in an preheated oven to 350 degrees. I would lightly season the chicken with salt and pepper and garlic powder.
Now, I would prepare my topping of choice or as we call it my gravy. I use 2 or 3 cans of cream of chicken soup. I add about 1/2 half can of milk and 1/2 can of water. Next I would add some diced up onion and chopped green bell pepper. Next I add the seasonings to the soup. I add ground cumin ,ground sage ,garlic powder, salt and pepper to taste. I will let this simmer until the onions and bell pepper get soft.
Then I would pour this over my chicken and continue to cook until it is bubbling nicely. You can change the soup to cream of mushroom and instead of onion and bell pepper use some extra chopped mushrooms.

I serve this dish with mashed potatoes, because we use the topping like gravy over the potatoes too.You can also cook some rice or egg noodles and put the chicken and topping right on top. This is some of my favorite ways to serve my smoothered chicken.

Smothered Chicken over Noodles
I have added a new twist to my smoothered chicken recipe. I have diced up the chicken or you could use canned chicken add it to my topping recipe. Cook some egg noodles or rice and top with the canned or diced up chicken. that has already been added to my topping recipe. My bunch really likes it over egg noodles.Using the canned chicken will help you get it done a lot faster than dicing up chicken breast. I tried this way and the family really loves it over egg noodles. A faster, easier way to a great meal.
