My Favorite Smothered Chicken Recipe
Smothered Chicken
First thing that I do is rinse off about 4 pounds of boneless,skinless chicken breast. I use an electric skillet so I spray a light coat of cooking spray on the pan to prevent sticking.Next I add chicken to medium to low heat skillet to cook slowly, if you prefer you can bake chicken in an preheated oven to 350 degrees. I would lightly season the chicken with salt and pepper and garlic powder.
Now, I would prepare my topping of choice or as we call it my gravy. I use 2 or 3 cans of cream of chicken soup. I add about 1/2 half can of milk and 1/2 can of water. Next I would add some diced up onion and chopped green bell pepper. Next I add the seasonings to the soup. I add ground cumin ,ground sage ,garlic powder, salt and pepper to taste. I will let this simmer until the onions and bell pepper get soft.
Then I would pour this over my chicken and continue to cook until it is bubbling nicely. You can change the soup to cream of mushroom and instead of onion and bell pepper use some extra chopped mushrooms.

- 1 small green bell pepper

- 1/2 soup can of milk
- 1/2 soup ccan of water
Family Time
I serve this dish with mashed potatoes, because we use the topping like gravy over the potatoes too. It would also be great with a rice side dish or maybe even some pasta,you decide, A nice green salad would be nice.
