In fact, chicken makes meal time a lot less boring because it's possibilities are endless. It's also high in protein, making it nutritional for everyone in your family.

Grilled Chicken with Homemade Veggie Salsa

15 Minute Meal

This fast and easy grilled chicken recipe isn't only delicious, but it's a healthy dish for your family. It's packed full of vegetables that offer vitamins and is ready in 30 minutes or less. The greatest part about this chicken recipe is that it only takes 15 minutes to prepare!

You Will Need:

4 boneless skinless chicken breasts
1/4 cup olive oil
1 medium tomato, seeded and chopped
1/2 medium cucumber, peeled, seeded and chopped
2 tablespoons finely chopped onion
2 tablespoons finely chopped fresh cilantro
1 tablespoon lime juice
1/2 teaspoon salt


Directions:

(1) Heat charcoal grill over medium flame, or coals. This also works by cooking on a George Forman Grill.

(2) While grill heats up, toss together tomato, cucumber, onion, cilantro, lime juice and salt.

(3) Refrigerate salsa mix for 30 minutes.

(4) Brush chicken breasts with olive oil and grill until no longer pink, about 7-8 minutes per side.

(5) Drain salsa if necessary and serve over chicken.

Makes 4 servings.

Asian Inspired Lemon Chicken

30 Minute Meal

This yummy chicken dish offers a little touch of Asian cooking and is ready in as little as 30 minutes. Serve this lemon chicken over rice or with a salad for a complete healthy meal your family will enjoy.

You Will Need...For the Chicken:

2 large boneless, skinless chicken breasts, cut into bite-sized chunks
1 tsp soy sauce
1 egg yolk
1 1/2 tablespoon cornstarch
2-3 tablespoon olive oil, for frying
4 thinly sliced scallions, set aside to serve


You Will Need...For the Sauce

1 large lemon, zest and juice
2 tbsp sugar
1/4 cup water
1 tsp cornstarch
salt and freshly ground black pepper


Directions:

(1) Put the chicken in a small bowl and toss with the soy sauce. Leave to marinate for 30 minutes.

To make the sauce:

(2) Whisk together the lemon zest. lemon juice, sugar, water and cornstarch in a small saucepan.

(3) Bring to a boil, whisking constantly until thickened, then lower heat to keep warm.

(4) Heat the olive oil in a large heavy-based saucepan.

(5) Whisk together the egg yolk and cornstarch in a small bowl to make a batter.

(6) Dip the chicken in the batter and transfer to frying pan for 3-4 minutes on each side until golden brown and cooked through.

(7) Place on a plate and spoon the warm lemon sauce over the chicken.

(8) Spread the scallions over the whole dish before serving.

Makes 3 servings.

Butter Garlic Cheesy Chicken

30 Minute Meal

This quick and easy chicken dish is sure to please the whole family. It takes only 10 minutes to prepare and 30 minutes to bake. Whip up a box of instant mashed potatoes or rice for a great side dish and you're set!

You Will Need:

1/2 cup butter
4 garlic cloves, minced
3/4 cup dry bread crumbs
1/2 cup freshly grated Parmesan cheese
1 1/2 cups shredded Cheddar cheese
1/4 teaspoon dried parsley
1/4 teaspoon dried oregano
1/4 teaspoon ground black pepper
1/8 teaspoon salt
8 boneless, skinless, chicken breasts, halfed and pounded thin


Directions:

(1) Preheat oven to 350 degrees F.

(2) Melt butter in a saucepan over low heat, and cook garlic cloves until tender, approximately 5 minutes. Transfer mix to a shallow bowl.

(3) In a separate shallow bowl, mix bread crumbs, Parmesan cheese, Cheddar cheese, parsley, oregano, pepper, and salt.

(4) Dip each chicken breast in the garlic butter mix to coat, then press into the bread crumb mixture.

(5) Arrange the coated chicken breasts in a 9x13 inch baking dish an inch apart.

(6) Drizzle with any remaining garlic butter over chicken and top with any remaining bread crumb mixture.

(7) Bake for 30 minutes or until chicken is no longer pink and juices run clear.

Makes 4 servings.

    Plain roast chicken sprinkled with salt and pepper is wonderful. Lemon pepper gives it another fabulous flavor. Most any favorite herb or spice will make your chicken delightful - experiment with it and discover your favorite!

Lemon and Herb Roast Chicken

Looking for an easy and delicious chicken recipe that will satisfy your whole family? Well here's a recipe that tastes amazing and only requires 1 hour cooking time. All you need are 6 basic ingredients and 15 minutes prep time to cook this superb lemon herb roasted chicken dish.

You Will Need:

4 ounces softened, unsalted butter
2 teaspoons chopped fresh rosemary
2 teaspoons chopped fresh sage
2 pieces fresh garlic
2 lemons, thinly sliced
1 (3 pound) whole chicken


Directions:

(1) Preheat the oven to 400 degrees.

(2) In a small mixing bowl, combine the unsalted butter, fresh rosemary, and fresh sage.

(3) Mash pieces of fresh garlic with the back of a spoon and chop into tiny pieces.

(4) Mix in with butter and herbs.

(5) Place the unsalted butter mixture and lemon slices (save a slice) under the skin of the chicken breast and in the cavity of the chicken by spreading with fingers.

(6) Sprinkle a dash of salt and pepper over chicken breast and squeeze a small amount of lemon juice (from saved lemon slice) on top of chicken.

(7) Place chicken in a roasting pan (you can use a foil pan as well).

(8) Cook chicken breast, uncovered, for about an hour, until the juices run clear.

(9) Cut a slit in the center after 1 hour, to check for pinkness, and cook an additional 15-20 minutes if not completely done.

Makes 4 servings.

Chicken and Sausage Casserole

This chicken and sausage casserole incorporate just the right amount of spice to create a deliciously seasoned dish. Potatoes compliment the chicken and sausage concoction making it one of my favorite comfort meals!

Ingredients:

6 medium potatoes, peeled and quartered
2 bell peppers (red, yellow or green), sliced
1 medium onion, thinly sliced
1 teaspoon oregano
1 teaspoon paprika
1/2 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
1 frying chicken, cut up
1 pound sweet Italian sausage links, cut up
1/4 cup vegetable oil


Directions:

(1) Arrange potatoes, peppers and onions in large, shallow 3-quart casserole.

(2) Mix oregano, paprika, garlic powder, salt, and pepper, and sprinkle half the mixture over potatoes.

(3) Arrange chicken and sausage on top. Pour oil over and sprinkle with remaining seasonings.

(4) Cover and bake at 425 degrees F for 1 hour.

(5) Uncover, and bake at 375 degrees F for 30 minutes, or until browned.

Makes 6 servings
