I love hot sauce, hot peppers and hot food. I crave hot wings and add all types of hot sauce to my food. I just can't enough of the hot stuff. This lens is going to look at what makes hot peppers spicy and why. Then take the poll and tell us if you think spicy foods can be addicting. According to the Scoville Rate, these are some of the hottest peppers around. Have you ever tried one of these? I love hot stuff but these are way too hot for me! I have tried Jamaican foods that were made with Scotch Bonnet and believe me, it's HOT!
  1. Bhut Jolokia - Currently in the Guiness Book of World Records as being the hottest pepper with a Scoville rating of 1,001,304. Ouch!
  2. Dorset Naga - Scoville rating of 923,000.
  3. Red Savina - Scoville rating of 580,000.
  4. Chocolate Habanero - Scoville rating of 425,000.
  5. Regular Habanero - Scoville rating of 350,000.
  6. Scotch Bonnet - Scoville rating of 325,000.
  7. Devil's Tongue - Scoville rating of 325,000.
  8. Tepin - Scoville rating of 265,000.
  9. African Devil (Peri-Peri) - Scoville rating of 225,000.
  10. Jamaican Hot Pepper - Scoville rating of 200,000.

What Makes a Pepper Hot?

And how does one rate it?

The chemical responsible for making a hot pepper hot is called Capsaicin. This chemical is produced by the plant as a defense mechanism to prevent grazing animals from eating it. Because of it's properties, humans have used it to spice up thier foods and drinks even! Capsaicin is also being studied and used to treat certain health issues and for use with pain management.

Wilbur Scoville is the person responsible for developing a scale (Scoville Scale) to measure the heat in a chili pepper by measuring the amount of capsaicin present.

Capsaicin is not water soliable so drinking water will not put out the fire! Your best bet is to drink milk.

My Favorite Hot Sauces

Depending on what I'm eating, I have to use a different sauce for different types of food. Tabasco brand hot sauce generally goes good with anything though. Here are a few of my favorite hot sauces.

My Secret Chili Recipe

Don't tell anyone!

I love chili. It doesn't matter if it 115 degrees outside, I'll still eat chili. This recipe is something I started and created all on my own and it's been a family favorite for years.

I don't use measuring cups or spoons. Never have, never will. So I'll give some estimates. You can add more or less to taste.

1 lb of ground beef or turkey
1/2 large sweet onion
1 teaspoon granulated garlic or 2 to 3 cloves of fresh
1 teaspoon of ground cumin (I love the taste of cumin so I add more than that) or to your taste
2 bay leaves
1 (10 oz.) can of Rotel Brand diced chiles and tomatoes
1 (8 oz.) can of tomato sauce
1 15 oz can of Ranch Style Beans (I use this brand because I really like the seasonings they use and it adds to the recipe. If you are really brave, use the Ranch Style Beans w/Jalapeno
Salt to taste

Brown the beef or turkey. If using turkey, you may need to add a little oil. If using beef, drain off the excess fat.

Add the dry chili powder and stir it to coat the meat and them add the Ro-Tel Chili and Tomatoes.
Add the onions, garlic, cumin and bay leaves.

Pour in the tomato sauce but only as much as you want your chili to thick or thinner. I normally hold back about 1/3 of the can until after I add the beans to see how saucy the chili will be.

Let this simmer for 20 minutes. Add the Ranch Style Beans. Stir and simmer for 5 minutes. Check the thickness of the chili. If you like it thinner add the remaining tomato sauce. Not thin enough? Add a little water.

Remove the bay leaves.

Add salt to taste.

Garnish with grated cheddar cheese, some freshly chopped onions or green onion for color and a dollup of sour cream.
