Do you love sour pickles?
The more sour the better as far as I'm concerned when it comes to pickles. I also love to make my own but sometimes I don't want to go through the hassle of canning so instead I make refrigerator pickles. This is especially good when you only have a few cucumbers or other veggies you want to pickle.
Refrigerator Pickles
The easiest way to make homemade pickles is to make refrigerator pickles. These are pickles that must be stored in the refrigerator after preparing and eaten relatively quickly (they keep for about 2 months).To make refrigerator pickles you need all the ingredients for normal pickles, a container, a pot to boil the brine in, and that's it. I recommend making small batches of one or two jars at a time. For refrigerator pickles since you aren't trying to get a totally sealed container you don't have to use a canning jar, you can recycle a pickle jar (wash it very well first) or even use plastic storage dishes like Tupperware, only requirement is it must be heat safe and have a secure lid.
Step 1: Pack your container with whole or sliced pickling cucumbers and any garlic, peppers, dill, etc. in the recipe.
Step 2: Bring the brine ingredients to a boil on the stove.
Step 3: Pour brine over into the container over the veggies. Fill almost to the top.
Step 4: Place lid on top and allow to cool.
Step 5: Place in fridge and wait. Pickles will be ready in 4-7 days depending on how strong you like your pickles.

- My first attempt at pickle making was disastrous! Nobody told me that the dill pickles couldn't be eaten right away. I was young and not-so-bright in the canning department.
