Creating Sparkling Wine in Various Ways
After many centuries of production and enjoyment, sparkling wine is still thought of a celebration wine.It is called sparkling wine because of its fizzy appearance. During the special procedure which they call secondary fermentation, bubbles is made by the carbon dioxide. To be specific, the secondary fermentation process occurs inside the bottle or pressure tank when the wine, yeast and sugar are mixed and processed.A lot of different methods can be applied in making a sparkling wine. The traditional or Methode Champenoise method, the evolved or Transfer method, the Charmat Bulk procedure and the carbonation/injection method.
The Methode Champenoise is the original method used in producing sparkling wine. The secondary fermentation takes place in a bottle to which the sugar and yeast is added. Then, the bottle is securely closed and stored in a somewhat upside-down position. The bottle is carefully shaken (also called riddling) during the fermentation procedure so that the dead yeast will slid down and end up in the head of the bottle. When done, the neck of the bottle is frozed so that the yeast will stay on top and the cap is then removed to pop the dead yeast out of the bottle. Finally, the bottle is resealed with a cork and it is now ready for consumption.
The transfer method is what we consider the evolved method of Methode Champenoise. With transfer method, the processes are alike to that of the Methode Champenoise and only difference is that the procedure does not include shaking or riddling to remove the sediment but instead the wine is transferred to a pressurized tank where the sediment is filtered. Finally, it is bottled, corked, and secured with a wire hood before it is being sold in the market.
The secondary fermentation procedure in the Charmat Bulk method takes place inside a large pressure tank. It is an efficient method because the sparkling wine is created in big volumes. Charmat Bulk process is known to be the fastest and least expensive way to make sparkling wines. Sugar and yeast are added inside a temperature-controlled, large pressure tank when applying the Charmat Bulk procedure. With this procedure, the quality of wine produced is not as good as the quality made using the traditional method. Bubbles produced using this process is also larger because lesser time is spent compared to the traditional method.
As for the carbonation process, carbon dioxide is injected to the wine. The wine is bubbled or carbonated after the fermentation procedure. This is alike to the method used in soft drinks. This is also a quick and less expensive procedure but loses the quality of the sparkling wine.
Methode Champenoise is the best in making a good quality wine even though it is the most expensive and requires more effort. Production of wine in this procedure is not abused because natural fermentation takes place and there are no excessive movements.
