Spicy butternut squash and chickpea soup

Ranked #11,912 in Food & Cooking, #211,449 overall

Warming soup for a cool Autumn day

When the temperatures are starting to go down and you feel just that tiny bit of a nip in the air, that's when the butternut squashes will be coming into season.

I found this recipe for butternut squash soup and modified it for my own family. It is vegetarian, but can be modified by adding ham or back bacon.

Add in a loaf of crusty bread with butter and you have the perfect meal for an Autumn day.

It's the perfect time for a bowl of soup.

Chickpeas make a wonderful addition to butternut squash soup

A nice touch

Add a bit of diced, cooked ham to the soup. It tastes delicious.

Directions

Preparation:
Peel and chop squash and onion.
Crush Garlic Cloves
De-seed and finely chop chilli

Instructions:
Fry the onion for 3-4 mins at a high temp until brown. Add a little of the stock if needed to stop it sticking.

Add the chilli, garlic and spices, stir and cook for 15 seconds.

Add the butternut squash and stir to coat in the spicy mix. Add 3 tablespoons of stock, cover and leave to cook for 5 mins over a medium heat.

Add tomatoes, remaining stock and half the chickpeas, season well, stir, bring to the boil, then cover and cook over a medium heat for approx 20 mins or until the squash is tender.

Let it cool a little, blend, and then add the remaining chickpeas. Bring back up to heat and serve.

Number of Servings: 6

Non-vegetarian butternut squash soup

Chop 3 - 4 sliced smoked, dry cure back bacon.

Cook this on a low eat with a small amount of olive oil until crispy.
Add the onions and cook down slowly until browned.
Continue to follow the recipe as directed above.

I get my vegetables from Riverford as well. In fact, I've written a lens about them - well, about vegetable box schemes. And we got a small butternut squash in our Riverford box this week as well. We're going to add it to a risotto next week.

I have a butternut squash just ASKING to be made into soup in my kitchen right now! Came in my Riverford organic veg box just the other day - now I have to go looking for something to do with the aubergine...

An excellent idea. I've now added in a video that explains how to peel and cut up a butternut Squash.

Hmm. It looks delicious. But the very first ingredient causes me to hesitate. It might help if you would give some clear instructions on how to peel and chop a squash that has not been cooked first. I have a tough time even cutting an uncooked squash.
