Recipes - Pork
SPICY SUN GRILLED PORK RIBSIngredients
*1/4 cup Spicy Sun Pork Rub
*2 slabs of pork baby back ribs, about 3 pounds each
*salt
Directions
*1) Preheat grill to medium.
*2) In a large stockpot bring salted water to a boil.
*3) Add ribs to water, cutting slabs if necessary to fit into pot.
*4) Boil ribs until they are light gray color, about 25 minutes.
*5) Add 1/4 cup water to Spicy Sun Pork Rub.
*6) Remove ribs from water and transfer to grill, brush lightly with Spicy Sun Pork Rub, until ribs are cooked, at least 30-40 minutes.
Serve hot.
SPICY SUN HAM SAUCEIngredients
*1 cup raisins
*1 1/2 cups apple or plum jelly
*1 tablespoon vinegar
*1 tablespoon corn starch
*1 tablespoon Spicy Sun Pork Rub
Directions
*In a saucepan combine all ingredients.
*Cook over moderate heat until thickened, about 10 minutes.
*Good with baked ham, smoked pork chops or duck.
SPICY PORK AND BEAN CHILIIngredients:
*1/2 lb sliced bacon
*4 lb boneless pork shoulder, cut into 1-inch cubes
*2 tablespoons vegetable oil
*1 large white onion, chopped
*1 to 2 fresh jalapeño chiles, seeded and chopped
*4 large garlic cloves, minced
*1 package Spicy Sun Pork Rub
*14-oz can beef broth
*2 cups water
*28- to 32-oz can crushed tomatoes
*2 (19-oz) cans small red beans or kidney beans, rinsed and drained
Directions:
*1) Cook bacon in a 6- to 8-quart heavy pot over moderate heat, turning, until crisp. Transfer with tongs to paper towels to drain. Pat pork dry and season lightly with Spicy Sun Pork Rub.
*3) Add oil to pot and heat over moderately high heat until hot but not smoking. Brown pork in about 6 batches without crowding and transfer to a plate.
*4) Add onion and jalapeños and cook over moderate heat, stirring, until softened.
*5) Return pork to pot and add broth, water, tomatoes, garlic, and remainder of Pork Rub.
*6) Simmer chili, uncovered, stirring occasionally, until pork is very tender, about 2 hours. Stir in beans and bring to a simmer, stirring.
Serve with Sour Cream and Tortilla Chips. Serves 8.
Recipes - Chicken
CARIBBEAN CHICKEN WINGSIngredients:
*12 whole chicken wings
*1/2 package Spicy Sun Caribbean Rub
*2 cups Spicy Sun Super Ranch dressing (recipe below)
Directions:
*1) Rinse the chicken wings under cold running water, then drain and blot dry completely with paper towels. *2) Place the wings in a large bowl and sprinkle with Spicy Sun Chicken Rub.
*3) Turn the wings to coat the other side with Chicken Rub and then cover and marinate in the refrigerator for 24 hours.
*4) Preheat a grill to medium-high.
*5) Grill chicken wings, turning once, until the juices run clear when pierced with a fork. Serve immediately with a side of Dressing.
Spicy Sun Super Ranch Dressing
Mix Together:
*1 package Spicy Sun Super Ranch Dip
*1 cup mayonnaise
*1 cup Evaporated Milk
*Chill 20 minutes
OVEN BAG BAKED CHICKENIngredients:
*1 Whole Chicken - cut up (about 3 1/2 pounds)
*1 Oven Roasting Bag
*1 Package Spicy Sun Chicken Rub
*1 Large onion - cut up
*1 baking potatoe - cut up
Directions:
*1) Rub chicken pieces lightly with Spicy Sun Chicken Rub
*2) Add remainder of Rub to bag with 1/2 cup water
*3) Shake bag to mix up spices
*4) Add chicken, potatoe, and onion to bag and seal.
*5) Cook at 350* until done, about 50 minutes.

Whether used as an appetizer, soup or salad, or main dish, ready for the oven or slow cooker, chicken is a smart choice for any occasion. Each of the 350 recipes comes complete with nutritional information and prep and cook times.
Recipes - Seafood
Pan-Grilled Catfish1 cup water
2 tablespoons lemon juice
1 teaspoon Worcestershire sauce
1 cup all-purpose flour
1/4 cup of Spicy Sun Lemon Garlic Rub
3 pounds catfish fillets
1 tablespoon vegetable oil
In a shallow bowl combine water, lemon juice and Worcestershire sauce; set aside.
In a shallow dish, mix together flour, lemon Garlic Rub and set aside. Rinse fish, pat dry with paper towel. Dip fish in water mixture; dredge in flour mixture to coat.
Heat oil in a large skillet over medium-high heat. Place fish, skin-side up in skillet and cook for 6 to 7 minutes. Turn and cook until firm, about 7 more minutes. Serve hot.
Makes 8 servings.
*Note* Make our Seafood Diablo Dip as a condiment for the fish for extra island spice!
Fresh Baked Mahi-Mahi
This is one of Spicy's favorite recipes ever! Even better grilled!!FRESH BAKED MAHI-MAHI
*6 pieces mahi-mahi at 6 oz. each
*1/2 c. Raspberry Vinegar
*1/4 c. balsamic vinegar
*3/4 c. cream
*1 Tbl. Spicy Sun Onion Fiesta Dip
*1 tbsp. butter
Rub the butter on bottom of the baking dish and arrange the fish in the dish. Pour the vinegars and cream over the fish and sprinkle with Onion Fiesta Dip. Cover with parchment paper and bake in oven at 450 degrees for 12 minutes.
