Spinach Pancake - Yum Yum Yummy
Spinach is healthy. It is an excellent source of vitamin A which is good for your eyes.It is low in calories yet high in vitamins, minerals and other phytonutrients. The carotenolds and vitamins C and E found in spinach are believed to reduce the risk of cancer, heart disease, stroke and cataracts.
I like to use it in different ways in different dishes. Boiled spinach, I find it unapeitizing. When you make it tasty, even children eat it with relish. You don't need to show them Popeye.

Preparation time - 10 minutes. Cooking time : 20 minutes.
Eating time : few seconds. Serves - 4.
For spinach pancake we need;
- Fresh spinach leaves - 1 cup.
- Flour for batter: Whole wheat flour 1/2 cup plain flour 1/2 cup.
- Salt to taste.
- Water/ milk to make batter.
- Oil/Butter for shallow frying.
- Cook spinach with a few spoonfuls of water for 2-3 minutes.
- Puree spinach.
- Mix spinach puree with flour mix. add water/milk to form batter. Add salt to taste.
- Heat pan. Pour a ladleful of batter and spread in a round. Sprinkle a little butter/oil.
- Serve hot with tomato ketchup, jam, curry, pickle. Or just like that.
