Delicious Pumpkin Bread Recipes Made With Splenda!

Basic Pumpkin Bread Recipe
What You Will Need:3 cups all purpose flour
1 1/2 teaspoons pumpkin pie spice (if you want more cinnamon, you can add 1/2 teaspoon)
1 1/2 teaspoons salt
1 1/2 cups Splenda Sugar Blend for Baking
1 15 oz. can pumpkin (pure pumpkin, not pumpkin pie mix)
4 eggs
1 cup vegetable oil (preferably canola)
1/2 cup orange juice
Recommended Baking Tools
- Kitchen Aid silicone spatula scraper
- Pyrex 8 x 4 inch loaf pan (you can use a nonstick pan if you wish)
- Electric mixer (stand mixer or hand mixer, or if you want to mix the old fashioned way, that's fine too! Your arms will get a good workout!)
What To Do Next
Combine flour, pumpkin pie spice, baking soda and salt in a large bowl.
Combine Splenda Sugar Blend for Baking, eggs, oil, canned pumpkin, and juice in mixer bowl and beat until blended.
Add pumpkin mixture to flour mixture and stir until moistened.
Fold in desired ingredient (apples, cranberries, blueberries-- be creative!)
Grease loaf pans (you can spray with Pam or grease with butter/margarine)
Spoon in batter to prepared loaf pans.
Bake for 60 minutes or so. Remember, every oven is different so you may need to keep checking for doneness. I like to use a wooden toothpick and prick the center of the bread to see if it comes out clean.
When the bread is done, slowly take the pans out of the oven and cool for about 15 minutes. You can then take the bread out of the pans and cool completely on a wire rack or plate. Take care not to burn yourself! I learned the hard way:)
