Sponge Cake Recipe

Ingredients
- 8 eggs separated to whites and yolks
- 190g sugar
- 95g flour
- 55g corn flour
- 45g melted butter
- 1 tsp vanilla extract
Instructions
1. Preheat oven to 180C/350F.
2. In a mixing bowl, whisk the egg yolks on high speed until creamy. Add 2 tablespoons of sugar and mix until thicker. Add the vanilla extract and keep mixing until mixture doubles in volume.
3. Transfer mixture to another bowl and set aside.
4. Wash the mixing bowl used in the whipping of egg yolks. Now whip the egg whites on high speed until white and frothy. Slowly add the sugar a bit of a time. When mixture clings, it is ready.
5. Combine egg yolks and whites. Fold together and do not over mix.
6. In a sieve, combine the flour and corn flour and sift slowly into the mixture.
7. Fold together. Do not over mix. Toss in the melted butter and combine.
8. In a 10" spring form pan lined with parchment, transfer the batter and spread evenly. Shake pan to remove air.
9. Bake into oven for 30 minutes. Cake is ready when skewer inserted at the middle of the cake comes out clean.
10. Set aside to cool. Run around the edge of the pan with a sharp knife and remove spring form pan.
11. Serve.
