    My Dad always made squash in a skillet. He just called it squash. He made it with water and seasonings and it was great! Thank you for sharing your squash recipe.

    I don't see much squash here when I shop but in any case home-grown like yours is going to be the tastiest every time! I'm certain I'd enjoy this delicious squash casserole which is perfect for vegetarians and meat-eaters alike. Blessed.

    Sadly, I only know the vegetable fried. Were it to show up on my plate dressed differently, I wouldn't know it. But, I do love it fried. Thanks mom.

    I love winter squash! Usually I mix it with spices like garlic, onion, pepper, and salt.. and add some butter. Yummy! Your squash casserole recipe looks great. I think I'll give it a try!

    I just love squash...normally I prepare it either as salad or cooked with onion, thyme, garlic and ginger paste and chillies........simple recipe....great lens..........thanks for sharing.............

    Instead of boiling the veg, you can sautee with a little olive oil or butter and maybe just a splash of white wine or chicken stock. I have also added leftover cooked cubes of chicken or pork and it makes a very satisfying one-dish meal.

    Your recipe sounds wonderful and I will definitely try it. I usually make mine similar to yours - but have not tried the sour cream or the topping. and I will do that. Squash is my favorite casserole!

    Holley, I had fully intended to make this squash casserole for Thanksgiving. I had a squash that I had set by the patio door to keep and I completely forgot about it with all the other cooking that day and a grease fire. I'll have to get another one and try it for Christmas.

    I think this is my new favorite squash recipe! The one I usually use doesn't have the stuffing on top, but I love how that sounds and how it looks, so I know I'll love how it tastes. Saw some wonderful, local fresh squash at the store yesterday, so I'm anxious to try it!

So about this Squash recipe...it looks so good that I'm going to make it this weekend. I will probably do the top and bottom crust, too. We're going to my daughter's in Kansas for Thanksgiving and I'd love to make it for them, too. But, of course, I want to be able to say we already love it. Which I'm sure we will!!

    I love squash and always have and we used to have it all the time back home in Africa. Have been living in Ireland for nine years now, and haven't seen one. They have never heard of it. Whether I could eat it just by itself though, is open to question.
