Bonus: Squid Gumbo
A couple of squid recipes in case you would rather feed squid
to your favorite Squidoo lensmaster.
Squid Gumbo
Squid Gumbo2 cup Fish stock (recipe below)
3 pound Squid, cleaned and cut into rings
2 Scallions, chopped chopped
2 Stalks celery chopped
2 Bell peppers chopped
1 cup Canned tomatoes with juice
2 to 10 Cloves Garlic, minced
3 Bay leaves
1 teaspoon File' powder
Salt to taste
Pepper to taste
Cayenne to taste
1 to 4 tablespoons Vegetable oil
Directions:
1. Saute garlic in oil in a large, heavy casserole or stock pot over low heat until slightly browned. 2. Add fish stock (recipe below), tomatoes, scallions, celery, bell pepper, bay leaves, salt and pepper.
3. Simmer, covered, for 15 minutes.
4. Add squid, turn up heat to a medium boil and cook 3 minutes longer.
5. Turn down heat to below boiling and add file powder.
6. Stir, heat 30 seconds more, remove from heat.
7. Sprinkle with cayenne.
Serve in bowls over rice with beer and toasted French bread or baguettes.
Fish Stock
3 quart water
2 pound Fish heads and/or collars
2 Carrots, roughly chopped
2 Onions roughly chopped
1 large Garlic, peeled, whole
3 Bay leaves
1/2 cup Parsley, whole stems
1. Simmer all the ingredients in a covered pot for 45 minutes.
2. Skim off the foam every 10 minutes.
3. Strain through a sieve or cheesecloth.
4. Salt and pepper to taste.
Fish stock may be frozen for up to 1 month, or refrigerated for 3-4 days.

Squid GuisadoBasic Recipe from the Photographer
Garlic
Onions bulb
Red bell pepper
Green pepper
Squid (calamares)
1. Fry the garlic bulb onions.
2. When its a little cooked add the squid
3. Add salt and seasoning when the squid is already cooked.
4. Add the peppers.
5. Serve.
Calamares Guisado (Stewed Stuid)
3 tablespoons olive oil
1 medium green bell pepper, chopped
1 medium onion, finely chopped
2 cloves garlic, peeled and crushed
2 pounds squid, cleaned and prepared for cooking
1 16 ounce can crushed plum tomatoes
1/2 teaspoon dried oregano
1/4 teaspoon dried tarragon
Salt and ground black pepper to taste
1. Heat the oil in a heavy kettle or skillet and add bell pepper, onion and garlic. Saute over moderate heat until tender.
2. Add squid and cook for 5 minutes.
3. Stir in tomatoes, oregano, tarragon, salt and pepper.
4. Bring to a boil.
5. Lower heat and simmer, covered, for 15 to 20 minutes or until tender.
6. Serve

- wild Republic Stuffed Squid sounded like some elaborate dish there... I should definitely own the lego squid ammo - given that lego and Squidoo are two of my passions. I love those squidlike mini camera tripods. Love the Octosquid link. One thing to note - "Squid" isn't a computer language, it's web caching server software - so you could say "For those into the Squid cache system" (sorry I am a pedant). Otherwise - this an amazing collection of squidbits. (like tidbits, only more tentacles).
