Stale bread is a nuisance to a lot of people but some people prefer it. There are an endless number of uses for stale bread besides throwing it to the birds. Stale bread can be used with a number of recipes or it can be the main attraction. Stuffing, bread pudding, or french toast; stale bread is perfect for making these recipes and more. Don't throw out your stale bread before taking a look at the recipes below.

How to make croutons using stale bread

Homemade Crouton Recipe

Ingredients

Two thick slices of bread
4 Tbsp Olive Oil
2 Cloves Garlic, crushed
Salt and Pepper

Preparation

Preheat the oven to 200 C (400 F).

Trim the crusts from the bread then cut into small cubes.

Put the olive oil and crushed garlic in a bowl. Season with a pinch of salt and a generous amount of freshly ground black pepper. Mix well.

Transfer the garlicky oil into a shallow dish. Add the bread cubes and gently mix by hand until the croutons are well coated. The croutons must now be cooked immediately.

Place the garlic croutons on a baking tray and cook for ten minutes.

Leave the garlic croutons to cool then place in an airtight container and store in the fridge - they'll keep for a day or two.

Stale bread recipes can be really tasty

Rather than plain garlic croutons. you can go one stage further and use your stale bread to make garlic parmesan croutons. The video suggests using French bread but any type of bread works (eg homemade semolina bread, pumpkin bread or an ordinary white loaf). Fresh bread cam be used too.

The French call French Toast "pain perdu" - lost bread - because it saves wasted bread. If your bread isn't too stale, you could also try a bruschetta topping or maybe just spinkle it with confectionary sugar.

Ingredients

4 eggs
2/3 cup milk
2 teaspoons of cinnamon
8 thick slices of stale bread
Butter
Maple syrup

Preparation


1. Beat eggs, milk, and cinnamon together. Whisk until well blended. Pour into a shallow bowl.

2. Dip each slice of bread into the egg mixture, allowing bread to soak up some of the mixture. Melt some butter over a large skillet on medium high heat. Add as many slices of bread onto the skillet as will fit at a time. Fry until brown on both sides, flipping the bread when necessary.

3. Serve hot with butter and maple syrup

You can also top french toast with powdered sugar or fresh berries.

Homemade Stuffing Recipe

1/2 C Butter or margarine
1 Large onion, diced
1 C diced celery w/leaves
15 C Toasted 1/2-inch bread cubes
1 1/2 tsp Salt
1/4 tsp Black pepper
1 tbsp Dried sage, or 1/4 cup minced fresh sage
1/2 C Chopped parsley
1 C Turkey stock, water, or milk

Preparation


Melt butter in large stockpot. Add onion and celery and cook until vegetables are tender but not browned. Add to bread cubes in large bowl. Add salt, pepper, sage, and parsley and toss until well mixed. Add turkey stock and blend well. Use to stuff 12 to 14-pound turkey. Bake leftover stuffing in lightly greased casserole at 325 degrees for 45 minutes to 1 hour or until heated through.

Ingredients

2 cups granulated sugar
5 large beaten eggs
2 cups milk
2 teaspoons pure vanilla extract
3 cups cubed stale Italian bread
1 cup packed light brown sugar
1/4 cup (1/2 stick) butter, softened
1 cup chopped pecans

Directions

Preheat the oven to 350 degrees F. Grease a 13 by 9 by 2-inch pan.

Mix together granulated sugar, eggs, and milk in a bowl; add vanilla. Pour over cubed bread and let sit for 10 minutes.

In another bowl, mix and crumble together brown sugar, butter, and pecans.

Pour bread mixture into prepared pan. Sprinkle brown sugar mixture over the top and bake for 35 to 45 minutes, or until set. Remove from oven.

Bread Pudding Sauce

1 cup granulated sugar
1/2 cup (1 stick) butter, melted
1 egg, beaten
2 teaspoons pure vanilla extract
1/4 cup brandy

Mix together the granulated sugar, butter, egg, and vanilla in a saucepan over medium heat. Stir together until the sugar is melted. Add the brandy, stirring well. Pour over bread pudding. Serve warm or cold.

    I never have stale bread.. make my own and it gets eaten much too quickly! I did appreciate all these great ideas for using up stale bread though, and it made me wish I had some lying around.

    My favourite is pain perdu... However, we don't put maple syrup on it since we don't usually use this - it's not part of our kitchen cabinets, lol. We mostly put fine sugar or ice sugar on pain perdu. Now many variants are possible :)
    Loved this stale bread, definitely love bread, in any way.
