  • FILET MIGNON
    the filet mignon cut comes from the tenderloin area. It is very tender but some people find its flavor is too subtle.
  • NEW YORK STRIP
    the new york strip comes from the short loin area, It is very flavorful and juicier on the bone.
  • PORTERHOUSE
    the porterhouse cut is part ny strip and part tenderloin. It is a large cut of beef with the t-bone being a smaller version of the porterhouse.
  • RIB
    the rib cut is from the center of the rib roast and is not quite as tender as the ny strip.
  • FLAT IRON
    the flat iron cut comes from the chuck area. Not as tender as other cuts so its a good idea not cook beyond medium.
  • SKIRT
    the skirt comes from the rib cage area. this cus is used often in fajitas.
  • HANGER
    hanger steak is most often used as steak-frite which is tender steak strips and fries with a red wine sauce.
