Making Cupcakes

Ingredients
125g plain flour
250g Carnation Condensed Milk
1 large egg
½ tsp vanilla extract
75g butter, softened
1½tsp baking powder
For the icing
200g icing sugar
50g butter, softened
1-2 tbsp Carnation Condensed Milk
Few drops vanilla extract

Total Time: 18 minutes

Method

Preheat the oven to 180¡C (160¡C fan) mark 4. Line the muffin tin with muffin cases. Put the flour, condensed milk, egg, vanilla extract, butter and baking powder into a bowl and beat with an electric hand mixer for 2-3min until pale and fluffy.

Divide the mixture between the muffin cases and bake for approximately 15-18min until springy to the touch and golden brown on top. Cool slightly, then transfer to a rack to cool completely.

For the icing, beat together all the ingredients and spread or pipe on to the cooled cakes. Decorate as desired.
