Sugar Free Cookies With Stevia

Stevia Cookies are a healthy alternative to sugar filled cookies. Stevia is a zero calorie, all natural sweetener that can be used as a sugar substitute with a few adjustments to some of your favorite cookie recipes. Whether your favorite cookie is chocolate chip, oatmeal or peanut butter, you can now enjoy these Stevia alternatives.

Stevia is thought to be one of the safest sweeteners known to man. Many nutritionists are now recommending that diabetics or those wanting to lose weight, switch to Stevia because it will not adversely affect your blood sugar and because it helps keep control of your carbohydrate intake.

Good for You Oatmeal and Raisin Cookies

Ingredients

1/2 cup apple juice
1/2 cup raisins
1/3 cup vegetable oil
2 tablespoons almond butter
1 large egg
2 tablespoons plain yogurt (non-fat if you are watching your fats)
1/2 teaspoon powdered Stevia extract (taste the dough and if you like, add a touch more to taste).
1 teaspoon vanilla extract
1 cup rolled oats (not instant)
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt

Instructions

1. Preheat over to 375 degrees Fahrenheit
2. Oil cookie sheet
3. Place apple juice and raisins in small pot and simmer for 10 minutes. Let cool
4. In a bowl, mix oil and almond butter together, then add egg and yogurt. Mix in Stevia extract and concentrate and vanilla.
5. Add 1/2 of the raisins and all of the raisin/apple juice to a blender and blend until smooth. Stir into the oil-yogurt mixture. Add the rest of the raisins to the wet mixture.
6. In a second bowl, mix rolled oats, flour, baking powder and soda, cinnamon and salt.
7. Mix the dry ingredients into the wet mixture until just mixed. Do not over mix.
8. Drop cookie dough onto cookie sheet (approx 1 tablespoon), flatten with a fork.
9. Bake 12 to 15 minutes.

Melt in Your Mouth Peanut Butter Cookies

Ingredients

1/4 cup margarine
2/3 cup smooth or chunky peanut butter
1/2 teaspoon powdered stevia extract
1 teaspoon vanilla
1/4 cup apple butter
1 large egg
3/4 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt

Instructions

1. Heat over to 350 degrees Fahrenheit
2. Soften margarine
3. In a medium mixing bowl, cream the margarine and slowly add peanut butter.
4. Mix stevia, vanilla and apple butter to the peanut butter mixture.
5. Beat in egg and mix until the ingredients are smooth.
6. In a second bowl, sift flour, baking soda, cinnamon and salt together.
7. Add the dry mixture to the wet ingredients and stir until mixed. Do not over mix.
8. Place 1 tablespoon sized balls of batter on the cookie sheet.
9. Press flat with a fork.
10. Bake for 10 to 13 minutes.

Optional: Chop 1/4 - 1/2 cup roasted (unsalted) peanuts. Add to the wet mix before adding the dry ingredients.

Sugar Free Chocolate Chip Cookies

Ingredients

1/2 cup margarine
1/2 cup almond butter
1/3 cup mashed banana
1 large egg
1/2 teaspoon powdered stevia extract
1 teaspoon vanilla extract
1 cup Whole wheat flour
1/2 tsp baking soda
1/4 tsp salt
3/4 cup chocolate chips

Instructions

1. Preheat over to 37t degrees Fahrenheit.
2. Cream margarine until soft. Slowly add in almond butter.
3. Mix in mashed banana.
4. Mix in egg.
5. Mix in stevia and vanilla
6. In a different bowl, sift flour, baking soda and salt together.
7. Mix flour mixture into the liquid ingredients.
8. Add chocolate chips and stir.
9. If the batter is not quite stiff, add a few more tablespoons of flour.
10. Chill the dough to make it easier to handle
11. Drop tablespoon sized lumps of batter onto a greased cookie sheet. Flatten slightly with a fork.
12. Bake for 13 to 15 minutes.

    Yaaay.. glad to see Stevia recipes. Stevia is sooo much healthier for you than Splenda. I always keep a baggie with Stevia packets in my purse, as most restaurants still do not offer it.
