Cooking with sticky rice

Any kind of rice will get sticky to a certain degree when cooked, but sticky rice, also known as glutinous (glue-like) rice, is a special kind of short grain rice that becomes extra sticky when cooked. This type of rice is widely used in Asia as part of their cuisine.

The Chinese has a dish where the steamed botan rice (another name for it) is stuffed with different goodies like barbeque pork, sausage, dried shrimp, and mushroom. They also ground the sticky rice to make flour which is then used to make sweet filled dumplings and a special cake usually eaten at Chinese New Year.

You are probably familiar with mochi, a traditional Japanese cake which is made from mochi rice, another appropriate name for sticky rice. Mochi can either have fillings like sweet bean paste and ground peanuts, or be eaten plain. This cake is also a common New Year's day treat although you can also find it year round.

Many other countries such as Korea, Vietnam, Thailand, Myanmar, Malaysia, and the Philippines use glutinous rice to make a variety of delicious main dishes and desserts.

While there are many yummy dishes you can make or eat with sticky rice, I don't usually eat it with soup. To me it doesn't taste good as the starch is dissolved in the soup, altering the flavor. But that could be just me :)

Also worth mentioning is that besides the more common white, there are also black and purple variants of glutinous rice.

Mango sticky rice dessertFollowing are a few popular Oriental desserts with sticky rice as the main ingredient:

  • Eight Treasure Rice (or "ba bao fan") is a Chinese dessert made from steamed sticky rice mixed with lard, sugar, and eight kinds of fruits or nuts.

  • "Banh dua" is a Vietnamese dessert made from glutinous rice mixed with black bean paste cooked in coconut juice and wrapped in coconut leaf. The filling can be mung bean stir-fried in coconut juice or banana.

  • "Htoe mont" is a traditional Burmese dessert made out of sticky rice cake with raisins, cashews and coconut shavings. It's uauslly eaten on special occasions.

  • "Lopes" is a Malaysian dessert where the glutinous rice is wrapped in individual triangles using banana leaves and left to boil for a few hours. The rice pieces are then tossed with grated coconut all over and served with palm sugar syrup.

  • One of my favorites is black or purple sweet sticky rice porridge mixed with coconut milk. This dessert is popular in Thailand and Indonesia (that I know of).

Where to buy sticky rice

Most major supermarkets have sticky rice in their Oriental or Asian section. However, if there is an Asian grocery store in your town, you should purchase it there since the prices are usually cheaper. Alternatively, for convenience, you can also buy sticky rice online.

    You know, I've made sticky rice although at the time I wasn't going for the stickiness. I'm really all over the idea of a sticky rice dessert and need to try that for the leftover rice we bring home. Yumm!

    I love sticky rice! In fact, I just bought some mochi today! I would love to be able to make sticky rice, but I'm not very good at rice in general...
