How to make stir fried water spinach/kang kong
Water spinach also known as ong choy, Chinese water spinach, swamp cabbage, morning glory, water convolvulus, kang kong/kangkong, kang kung/kangkung, rau muong (Vietnamese), phak bung (Thai) and other names is leafy green vegetable which has tender and pointy leaves with crunchy stalks. This green is abundant in East and Southeast Asia. Once consider as poor man's dinner but in Western countries this cheap vegetable become scarce and pricey.
Some famous dishes of water spinach are sambal kangkong, kangkong belacan, adobong kangkong, tumis kangkung, cah kangkung, etc. If you are looking for easy water spinach recipe, here is my version of stir fried water spinach or known as tumis kangkung, rau muong xao toi stir fry, ong choy stir fry, kangkong goreng, cah kangkung.

This fish sauce is authentic condiments from Thailand. It will add some umami factor into all kind of foods. Better than MSG but without Chinese syndrome after effect. Highly recommended for Asian food lover.
Stir fried water spinach/kang kong recipe
Spicy and garlicky water spinach/kang kong stir fry

- Serves: 4
- Prep Time: 10
- Total Time: 20
Ingredients
- 1 lbs water spinach
- washed and cutted into 2 inches length
- 3-5 cloves of garlic
- chopped
- 2 tbsp vegetable oil
- 1 tbsp fish sauce
- pinch of sugar
- salt if it's needed
- pepper to taste
- 1 tsp chili paste (optional)
Instructions
Put vegetable oil in a wok or pan and heat it over high heat. Stir fry the garlic and chili paste about 1-2 minutes or until they are lightly golden and fragrant.
Add water spinach, sugar, fish sauce and pepper. Stir fry in very high heat. Cover the wok/pan. Cook for about 5 minutes.
Remove the lid and toss the greens several times to mix. Remove from the heat and serve it over steamed rice.

You will need a decent wok to make a good stir fried dishes. This 14 inch carbon steel wok is hand hammered made. Very handy and retain heat very well thus resulting deep wok flavor into your dishes. If you love cooking and Asian food, then this wok is a must have in your cooking tools collection. Very rustic and give more authentic accents.
