Easy Stovetop Meatloaf (With Fiber!)
My husband loves meatloaf, but guess what? I don't. It's not that it doesn't taste good, I just don't like dealing with the clean up. You've got the mixing bowl, the big, awkward roaster, and the serving platter. So I adapted my recipe to make a stovetop meatloaf, and added some fiber to give it a little extra healthy umph.
The Ingredients
1 lb ground beef
1/4 cup chopped onion
1 piece shredded stale bread (approx. 1 cup)
1 egg
1/4 cup wheat bran
Splash milk (approx 1/8 cup to 1/4 cup)
1/2 tsp ground ginger
1/2 tsp garlic powder/granules
1 tsp salt
1 tsp black pepper
other spices to taste (suggested: cumin, coriander, parsley)

The Directions
In a small bowl, stir wheat bran and milk together- just enough to wet the bran. Allow to sit for several minutes before mixing in egg.
In a large bowl, mix together remaining ingredients. Lightly grease a large pan with olive oil or non-stick spray and preheat on medium. Mix egg/bran mixture into meat mixture and pat into 3 or 4 mini loaves. Place in pan so that the loaves do not touch each other. Cover with lid or foil and reduce heat to medium low.
Cook until loaves are a little over halfway done. Turn loaves over and cover again. When loaves are just cooked through, top with ketchup or other prefered topping, cover again for 5-10 minutes. Serve with side item of your choice.
