Bread Recipe With Added Fruit

The Strawberry Banana Bread is perfect for Breakfast, Brunch, or a Snack. Here I'm having it for Breakfast with some Strawberries and a fat-free Yogurt along with the morning cup of Can't-Do-Without-It Coffee.
And I like to think it is a bit healthy. Among the ingredients are included two fruits - Real Strawberries and Real Bananas - versus imitation flavors. Also included are those good-for-you fiber ingredients Whole Wheat Flour and Old-Fashioned Oats. Add a little Cinnamon, which I'm hearing is good for us. A LOT can be said for Cinnamon, but that could be a whole other lens. Very little Sugar, which in itself is not really bad for us. Besides, the Bread needs a little Sugar for proper rising abilities. Our Chihuahua, Rosie, gives me lots of Sugar when we wake up and that helps me rise.If you have a back-to-basics mind set, or just love the aroma and flavor, what better way to get that than making your own loaf of homemade Strawberry Banana Bread. Luckily, with the range of bread machines on the market, anyone can easily make their own bread. I don't believe using the Bread Machine violates the idea of back-to-basics any more than using the refrigerator or washing machine. It just makes it easier and time-saving for a variety of reasons, which also would be another lens.

Liquid Ingredients

Lining up ingredients

Always put liquids in the bread pan first.

  • Yogurt - I used Yoplait fat-free Strawberry Banana - 6 oz.

  • Strawberries - Mashed* - 1/2 + cup - I buy frozen Strawberries, measured out 1 cupful, thawed and then mashed, which made almost 3/4 cup, but I put it all in anyway. Probably shouldn't have.

  • Bananas - Mashed* - 1 /2 cup - 2 medium bananas made just a little over 1/2 cup. Of course I used it all.

  • Vanilla - 1/2 teaspoon

That was easy enough. Let's see what's next.

Squeezing the Strawberries and Bananas

Place the fruit in a baggie and seal, removing as much as air you can. Then mash with your hands. This is an idea I saw on the internet. I like it because not only is it a time-saver, but it is also quite un-messy. Don't forget to defrost the Strawberries first - they're VERY COLD.

"Smooshing"

Then just upend the opened bag over the bread pan and "smoosh" the fruit out. Add the Yogurt and Vanilla. Next - the Dry Ingredients.

(My computer doesn't like "Smooshing", but it's a good descriptive verb in my opinion.)

Now for the dry ingredients.

  • Bread Flour - 2 cups

  • Whole Wheat Flour - 2 cups

  • Oats - Old-Fashioned uncooked - 2/3 cup

  • Cinnamon - 1 teaspoon

This is so easy. I love making bread.

  • Margarine - 2 Tablespoons - quartered - 1 quarter in each corner on top of dry ingredients - I like "I Can't Believe It's Not Butter" margarine. It has a pleasant buttery taste.

  • Yeast - Bread Machine kind - 2 1/2 teaspoons. Make a small hole in the center for the yeast - don't go through to the liquid.

Close the lid. Set the Bread Machine for a 2-pound Wheat Bread Loaf.
My Bread Machine beeps when it's in the mixing stage. That's when I make sure all the flours have mixed in well. If necessary, I help a little with a rubber spatula. Using a rubber spatula is safer for the Bread Pan and it's Paddle Mixer.

Don't put a fork in it, use a toothpick. Stick the toothpick into the center of the loaf. If it comes out clean, your Strawberry Banana Bread is done.

When the time comes that I should need a new bread machine, I hope to get the Breadman BK1060S 2-Pound Professional Bread Maker with Collapsible Kneading Paddles and Automatic Fruit and Nut Dispenser.

The collapsible kneading paddles are the main feature I want. The paddles collapse automatically while the bread is baking leaving only about 1/2" hole in the bottom.

The automatic fruit and nut dispenser is also a good idea. I wouldn't have to worry about being caught on the phone or in the bathroom when the machine beeps.

Several reviews give good recommendations regarding this bread machine.

Using a potholder (this is one I crocheted), careful not to touch the Bread Pan or the inside of the Bread Machine, lift the Pan by the handle straight up and out of the Bread Machine.

Cool-Down Time

Set the Bread Pan with its precious cargo of Strawberry Banana Bread in a safe place. Let it cool for at least 10 minutes.

I forgot to take the photo before I cut the bread in half for freezing. It wouldn't go seamlessly back together again. But you get the idea.

Storage

In the Freezer

Usually I quarter the bread-loaf. Three of the quarters are bagged separately in freezer baggies. The fourth quarter is kept in a storage baggie on the kitchen table. The home-made breads won't keep as long as the store-bought varieties. However, mine have been good for over a week on the table and a good 3 months in the freezer. They might possibly keep longer than that, except the home-made breads are always eaten before that much time goes by.

p.s. That loaf of store-bought bread has been in there about 3 months or so. It could last forever in there.

    Whatever you do, don't make this! You will end up with a big lump of wasted ingredients. I believe she missed the step where she added the yeast.

    Derek - You are awesome! I am so glad you caught this error. I truly hope no one had to through anything out because of it. The yeast has been added to the recipe now and all is well again in Strawberry Banana Land. ;o)
