Strawberry Shortcake Cupcakes

If you love strawberries, you will love these cupcakes!
Since I am NOT a summer person at all, cooking is the last thing on my mind. So I have had to come up with things that are easy, do not take a lot of time and are light and refreshing. THESE cupcakes fit those categories.
There is nothing better than strawberries when they are in season, and many times the stores will run sales on them. So I try to stock up and I do that by freezing them. I slice them up and freeze them so all I have to do is thaw them whenever I want a strawberry smoothie or strawberry shortcake!
For these cupcakes I make a strawberry puree by placing them in a food processor and adding a little raw honey. Really, you can judge the amount of both you want to use. I have the hardest time keeping track of measurements when I cook!!

Strawberry Shortcake Cupcakes
Let's Bake
- Serves: 6 Extra Large or 12 Small Cupcakes
- Prep Time: 15 minutes
- Total Time: 50 minutes
Ingredients
- ½ cup Organic Sugar
- 6 oz. container Light Fat Free Strawberry Yogurt
- 2-Tablespoons of Canola Oil
- 2-teaspoons of Vanilla
- 2-Egg Whites
- 2 cups Unbleached Flour
- 2 teaspoons of no-sodium baking powder
- ½ teaspoon of no-sodium baking soda
- ½ cup Strawberry Puree
- ½ cup of Skim Milk
Instructions
Mix everything together until it is smooth. You can either use a whisk or an electric mixer. Fill your cupcake holders (you may want to lightly spray your cupcake papers so they will be easier to unwrap because this cake is denser than a boxed cake mix). Bake at 350 degrees for 30-35 minutes.
To make the Strawberry Puree : Add some sliced strawberries to a food processor and add some raw honey. Blend until it has the consistency that you like.

After they have cooled!!
Hollow out some of the middle of the cupcake, you can make it as deep as you want. **Hint** it would be a good idea to unwrap the cupcakes before you fill them with the strawberry puree so they will be easier to eat.Also it would be a good idea to wait until you are getting ready to serve them to add the puree. Everything else can be done ahead of time.
**REMEMBER** do not throw the cake crumbs away. Refer back to my Fairy Mushroom lens and make Chocolate Covered Cake Balls.
Topping
Ingredients
- I container of Lite Cool Whip
- Powdered Sugar
- Strawberry Puree
- Edible Fairy Glitter
Instructions
I am so sorry but I really cannot give you measurements here. What you want to do is add a little (about ¼ cup) of powdered sugar at a time to the cool whip. Stir it with a fork. Keep adding the powdered sugar until you get the consistency of a light frosting. (Oh, every so often be sure to do a taste test because Oh, my goodness it tastes good!!) If you want you can add a little of the strawberry puree to give it a light pink color and a little extra strawberry taste, or you can add a little flavoring of whatever kind you like. I left mine plain vanilla for this.
Twist, Snip and Add the Frosting!!
Okay, I reuse my baggies!! I mean I cannot reuse the baggies I snip the tip on, but the baggie in this picture is the same baggie I had my frozen strawberry slices in.Please try to reuse your baggies and anything else you can. It will save you money and help our environment.
Back to cupcakes!!
Okay, snip the very tip of the baggie as big or small as you want. Because you are going to use the frosting around the edge of the cupcake **Please Note** I was being very good when I made this cupcake because I like a little bit of cake with my frosting!!
The very last step is sprinkling them with an Edible Fairy Glitter, Because YOU KNEW I would have to mention that Fairies LOVE Strawberries!!

- OMG! You trying to fatten me up just before strawberries are in their season. I love the recipe (I haven't tried it yet, though. David is our pastry chef =) I love the layout and how you used that photo module to show the "step by step" instructions. Very efficient.
