Greek Stuffed Grape Leaf Recipe
My husband was adopted into a Greek family and learned to eat stuffed grape leaves (dolmathes) at an early age. When we got married his Aunt Sarah taught me to make stuffed grape leaves. She got the recipe from her mother, Stravula who was a recent immigrant from Greece. Our children grew up eating stuffed grape leaves and it is now our family's most treasured recipe and most beloved comfort food.
I've been making stuffed grape leaves for my family for almost 27 years. I expect that one day I'll be passing this recipe on to daughters-in-law and there will be a new generation of children being raised on stuffed grape leaves.

I will give you the big recipe for stuffed grape leaves that I make for my family. Then I will give you the small recipe that I used to make for just my husband and I.We have made converts of several of the kids' friends. Stuffed grape leaves may look strange, but when people try them they usually like them.

Stuffed Grape Leaves ~ The Large Batch
A Greek Version of stuffed grape leaves
Large Batch of Stuffed Grape Leaves
6 pounds ground beef
3 cups water
2 cups rice, uncooked (Uncle Ben's Converted)
6 teaspoons dried mint
5 tablespoons extra virgin olive oil
1 twelve ounce can tomato paste
5 teaspoons granulated garlic or garlic powder
3 to 5 eight ounce jars of preserved grape leaves
or leaves picked fresh from the vine
Stuffed Grape Leaves ~ The Small Batch
Ingredient List for a small batch of stuffed grape leaves
Small Batch of Stuffed Grape Leaves
1 lb ground beef
1/2 cup uncooked rice (Uncle Ben's Converted)
1 teaspoon dried mint
2 tablespoons extra virgin olive oil
1 cup water
2 tablespoons tomato paste
1 teaspoon granulated garlic or garlic powder
1 eight ounce jar of preserved grape leaves
or leaves picked fresh from the vine.
How to prepare Stuffed Grape Leaves
Yummy Greek Food. This works for either size batch of grape leaves.
Directions for preparing Stuffed Grape Leaves
1. Put the water in an 8 cup measuring cup.
2. Add the tomato paste, mint, oil, garlic and rice to the water and stir well.
3. Put the meat in a large bowl.
4. Pour tomato mixture over the meat and mix thoroughly.
5. This is your filling. Now I want you to visit this link for a tutorial on how to roll grape leaves. It is the clearest explanation I've seen. Once you see it you will know exactly how to do it.
6. As you are rolling, place each grape leaf in a Dutch oven (or other appropriately sized pan) seam side down. Make a layer in the bottom of the pan and then start another layer and so on until you are done. Don't fill the pan too full as they will float a little.
7. Add the brine from one jar of grape leaves to each pan. Less if the pan is smaller than a Dutch oven. If you are watching salt you can leave it out entirely.
8. Cover with water and bring to a boil. Reduce heat, cover and simmer for 35 minutes

1. Some brands of grape leaves are better than others. The brands we like are:Mezzetta

2. Grape leaves have gotten quite expensive lately and the big batch can take from 3 to 5 jars. Some places they are up to about $7. We have a grocery liquidators store here and I check there periodically and can sometimes find the good brands for 99 cents. This is a great bargain so I stock up!
3. There is an egg-lemon sauce that is meant to be served with stuffed grape leaves but none of us like it so we serve them with a nice crusty French Bread.

Avgolemono ~ Traditional Greek Egg-Lemon Sauce
Serve with stuffed grape leaves
Traditional accompaniment to Stuffed Grape Leaves
3 egg yolks
1/3 cup lemon juice, strained
1 cup hot broth from the cooked stuffed grape leaves
Whisk the yolks until pale and frothy. Slowly add the lemon juice and whisk for another minute. Add one third of the broth, constantly whisking. Add remaining broth. Transfer mixture to a small saucepan and heat gently. Whisk while heating, until mixture thickens enough to coat the back of a spoon. Do not boil. Serve immediately.
I wish I could elaborate on this but, as I said, we don't eat it. I wanted to include it because it is traditional.
