A Bit About Ice Cream

Ice cream is made with a flavour of choice inside a container with an outside part of the container (separated from the recipe, of course) filled with salt and ice. The salt and ice causes a special kind of chemical and temperature reaction that is called "freezing point depression." In this, the salt melts the ice very quickly, causing the act of 'fusion' to absorb heat quickly out of the ice cream mixture, FREEZING this mixture in the process.

It is strange that heat friction causes freezing, but this is a special type of process that is used to make ice cream.

We know it works because most of us have had ice cream before.

Banana Ice Cream

A Quick and Easy Recipe

3 Bananas (puree these) and place in a bowl.

Add:

375ml (3/4pint) Cream or Milk (or mix cream and milk to your taste)

Add:

100g sugar (4oz)

Mix these ingredients well then put the mixture into your favorite Ice Cream Maker...

Follow the instructions that came with your ice cream maker and freeze...

Honey Flavour Ice Cream

Honey Ice Cream Recipe

Ingredients:

500ml (a pint) milk
250ml (1/2 pint) heavy cream
1/2 cup of honey
5 egg yolks
1 teaspoon vanilla

Prepare egg yolks and honey, beating together

'Scald' the cream = bring liquid to boiling point, then quickly lower the heat, simmering on low

Add yolk and honey mixture to the cream, stirring until it all thickens.

Remove from heat, strain mixture and allow to cool significantly

When mixture is cooled, put it in your Ice Cream Maker and freeze, following your ice cream maker instructions.
