Summer Beverages to Beat the Heat

Summertime is a great time to kick back and relax. With all of the barbeques, bonfires, and beach parties, there are plenty of events to attend and host. Here are some great drink recipes that will work well for your gatherings, take some of the ingredients and the recipe as a hostess gift, or just whip some up for a relaxing afternoon on your deck. Cheers!

Hawaiian Margarita

Add following Ingredients to a blender
1 cup ice
1 oz gold tequila
1/2 cup orange sherbet
2 oz guava juice
2 oz pineapple juice
Blend until slushy then strain into Margarita glass

Mango Martini

3 fresh mangos, cut into chunks
1 cup of sugar
1 cup of water
citron vodka
orange liqueur (such as cointreau or triple sec)
1 cup crushed ice

Place fresh mango into a food processor and process until smooth.

Make a simple syrup by placing sugar and water in a small saucepan, cook over medium heat until sugar dissolves and liquid is clear. Do not boil. Store in refrigerator until ready to use.

Add 1 oz of mango pulp, simple syrup and vodka, plus 1/2 oz of orange liqueur in a blender with 1 cup of crushed ice. Blend until smooth. Serve in a martini glass

Rum Spritzer

Ice cubes
Dark or golden rum
tropical fruit juice
lime wedges

Fill cocktail glass with ice cubes. Pour 2 oz of rum and fill glass with fruit juice. Garnish with a lime wedge.

Strawberry Dream Cocktail

4 large strawberries
1 1/2 oz orange-flavoured rum
3 oz mango juice

Place ingredients in the blender. Blend and strain into glass. Add ice and a strawberry for garnishment if desired.

Bellini peach or strawberry

2 oz peach juice or peach puree or 2 oz of strawberry puree
4 oz Prosecco (Italian sparkling wine)

pour into a champagne flute and enjoy.

Sparkling Tropics Cocktail

1 1/2 oz pineapple juice
1 1/2 oz Alize Liqueur Alize Liqueur
Sparkling wine

Pour pineapple juice and Alize into a glass and top with sparkling wine.

Pina Colada

I wanted to share this recipe. I got it from Paula Deen's foodnetwork site

ice cubes
1/2 cup rum
1/2 cup coconut cream
1/4 cup coconut milk
1/4 cup pineapple chunks
Sliced pineapple, for garnish, optional
Maraschino cherry, for garnish, optional

Fill blender halfway with ice cubes. Add rum, coconut cream, coconut milk and pineapple chunks then puree.

Serve with garnishment if you choose, makes 4 servings

Strawberry Daiquiri

2oz rum
1oz lime juice
6 ice cubes
4 strawberries, sliced
2 tsp sugar

Mix ingredients in a blender, and blend mixture until smooth.

Kiwi Smash

1 whole kiwi
ice
1 /2 oz vodka
1/4 oz lemon juice
1/4 oz of simple syrup
2 oz white cranberry juice.

Chop the kiwi then crush with a spoon, add ingredients to a shaker. Shake vigorously and strain into a martini glass.

Garnish with a slice of kiwi.

Cucumber Collins

1/2 cup peeled and chopped cucumber
1 1/2 oz gin
1/2 oz lime juice
1/2 oz simple syrup
ice
3 oz soda water.

Add ingredients (except soda water) to a shaker and fill with ice, extract all the juices from the cucumber.

Shake and strain into a tall glass with ice then top with 3 oz of soda water.

Add cucumber and fresh blueberries as garnish.
