My Favorite Summertime Foods
My personal favorite foods for the summer season that are quick and easy to make include grilled hamburgers, grilled steaks, grilled seafood, southern fried chicken, macaroni salad, potato salad and fresh garden salads, to name a few. Southern Fried Chicken
- Prep Time: 15 minutes
- Total Time: 1 hour
This easy to make southern fried chicken is perfect for lunch, dinner or the main event on a fun summer picnic. I like packing it along on short fishing and camping trips.
Ingredients
- 2 to 3 pound frying chicken cut into pieces
- 1 cup of your favorite brand of flour
- 1 1/2 teaspoons of salt
- 1/4 teaspoon of pepper
Instructions
Place chicken pieces along with flour, salt and pepper in a paper bag and shake well to thoroughly coat the chicken. Place coated chicken in a heavy skillet or pan containing hot vegetable oil 1/2 to 1 inches deep. Cover the skillet and cook for ten to fifteen minutes over medium heat. Remover cover, reduce to low heat and keep turning the chicken for an additional twenty minutes or until all pieces are a golden brown. Remove from skillet and place on paper towels to remove excess oil. Enjoy!
Summer Potato Salad Recipe
- Serves: 6
- Prep Time: 15 minutes
- Total Time: 1 hour and 15 minutes
Homemade potato salad is a perfect side dish for just about any summertime foods, hot dogs, hamburgers, fried chicken, you name it. Potato salad is also very easy to make.
Ingredients
- 4 cups of cooked potatoes cubed
- 1/4 cup of vegetable oil
- 3 hard boiled eggs sliced or diced
- 1 cup of celery diced
- 2 or 3 tablespoons of diced onions
- 1/2 cup of mayonnaise or salad dressing
Instructions
Mix the the potatoes and vegetable oil together and marinate for one to two hours. Add the remaining ingredients and mix well. Season with salt and pepper to your tastes and top it off with a small amount of paprika and parsley. Refrigerate until cold.

Heart Healthy Garlic Shrimp for Summer
- Serves: 4 to 6
- Prep Time: 20 minutes
- Total Time: 30 minutes
Shrimp is one of my favorite sea foods and I am lucky enough to live in an area that offers an abundant supply of fresh Gulf shrimp. Garlic shrimp makes a great tasting healthy recipe that is perfect for a summer appetizer or a main dish. This recipe uses olive oil instead of butter for reduced fat intake and maximum health benefits. Serve alone or on a bed of lettuce, rice, or pasta. You can also add broccoli or other vegetables during cooking. Shrimp prepared this way also make a great appetizer. Arrange them on a plate with a toothpick in each one for easy eating.
Ingredients
- 24 medium to large raw shrimp
- deveined and peeled
- 2 cloves of garlic
- minced
- 2 tablespoons of olive oil
- 1 tablespoon fresh parsley
- a touch of black pepper
- to taste
Instructions
Heat the olive oil in a skillet, add the garlic, shrimp, and black pepper Stir regularly over low heat until shrimp turn pink on both sides, about 3 to 4 minutes. By keeping the heat low, it will ensure the garlic doesn't turn brown. Burned garlic will make the your shrimp taste bitter. When the shrimp are just about done, add the parsley and mix thoroughly.
Grilled Vegetables
The summer season offers us plenty of fresh healthy vegetables to add to our lunch and dinner menus. Grilling them provides a quick and easy way to add a variety of vegetables to your main course. You can skewer them with a variety of meats to make delicious kabobs. Some of my personal favorites are peppers, onions, eggplant, zucchini, halved plum tomatoes, mushrooms, broccoli, cauliflower, asparagus, potatoes wedges, corn on the cob, garlic, artichoke, and squash.
