Salads and Summer Just Go Together
Maybe someday I will live in a locale where summer salads are something that I will just take for granted and I can almost guarantee that I will never get bored with them! So get ready for some of the tastiest ideas that I can come up with. Is there anything easier than putting together a salad??
Well, it's June now and it's still cold where I live, but if the year says that it is summer (or even close) we begin eating salads. Now if I could only do something about the temps!!
It's Time!
Darling daughter has decided to re-think her decision to grow her own tomatoes from seed. She planted them late winter and as I write this, they are still not in the ground. It simply has been too cold and windy and here we are into June. Next year she plans on simply buying tomato plants!
Making Your Life Easier
Just spotted this over at JCPenney. It doesn't seem to matter how big a kitchen you might have, more work space is ALWAYS handy! I was just looking at a house on our street that sold this week and they DIDN'T have an island. I don't know how anyone functions without one. We use ours for EVERYTHING.Photo Credit: JCPenney

Easy Does It
Start with a bed of greens, alternate slices of tomato and orange sections.Drizzle with a citrus vinegrette and sprinkle with crushed pecans.
Now wasn't that easy!

How to make a Low Fat Dressing
Super Simple Pasta Salad
5 cups of multi-colored Fusilli1 cup frozen vegetable medly
6 green onions
4 cans tuna
1 tomato, diced
1 1/2 cups mayonnaise*
Directions:
1. Cook pasta according to package instructions.
2. A few minutes before pasta is completely cooked, add the frozen veggies.
3. Remove from heat, rinse immediately to stop the cooking process. Veggies should have a nice crunch to them.
4. Add remaining ingredients, mix in the mayonnaise and toss to combine.
5. Store in refrigerator to allow flavors to develop.

Deviled Eggs
Perfect for a Summer Picnic
1 dozen eggs2 teaspoons dijon mustard
1/3 cup mayonnaise
1 Tbsp minced onion or shallot
1/4 teaspoon tabasco
Salt and pepper
Paprika
Boil the eggs until they are hard boiled. Scoop out the yolks, mash and then add the next 5 ingredients. Spoon mixture into the egg white shells and sprinkle with paprika!
Don't Like Spinach?
I can't stand the stuff cooked, but it makes one amazing tasting salad and it is positively full of nutrients! Now watch the dressing... that can get you into trouble!

- I love salads. Picked up the good tip of rolling a lemon before squeezing. I know I'll test that with good results and will probably use that technique forever. Good lens packed with a recipe within plus lots of resources, vids, and tips. 5*'s. Thanks.

- I just made a new summer salad yesterday...it was so simple and good I thought I'd share it. You cut up tomatoes, mozzarella cheese and marinate it in a lite Ceaser dressing and marinade ( I used Ken's Steak House brand). Really tasted good! Got kudos from my hubby!
