Squash, Squash Everywhere Squash

Sure it's everywhere but you hardly ever hear about it in conversation. A group of vegetables that come in many shapes, sizes and colors that has been relegated to the closet. It is time for Squash to stand up and take its rightful place among the proud world of vegetables.

I mean how many veggies can brag about having so many different colors and shapes. You have yellow, orange, green and all the shades in between. Jump up on my band wagon and cheer for Squash. 

You Can Eat It !!!! 

Summer Squash lends itself to almost any dish you can think of. It's great slightly steamed and added to a fresh spinach salad. You can mix it with rice or potatoes to add some great flavor and color.

One of my favorites is to saute a couple of different kinds of mushrooms together with the Summer Squash, mixing in a dash of hot sauce and serving with lots of fresh black pepper and a little bit of sweet butter. I also like to throw a scoop of nonfat cottage cheese on top the the shrooms/squash saute.

Another favorite is baking the Summer Squash with a nice tomato sauce, scallops, onions and green and red peppers. Throw in anything you think will fit and don't forget the spices. Serve with a nice grated cheese.

Try steaming the squash lightly and then serving on a platter covering the squash with olive oil and fresh basil and sprinkling crumbled goat cheese over it all. Does that sound good or what.

Grilling Summer Squash next to your steak or burgers gives it a wonderful flavor. Think about covering the steak in grilled onions, mushrooms and Summer Squash all sprinkled with a little bit of olive oil and garlic.

Steaming Your Veggies

Sure you can eat squash raw if you bored out of your mind, I'm sure it is a good way to lose weight since it would take you a day to eat one good size squash.

Since most of us don't have any desire to eat squash raw I suggest the best way is steamed. It allows for keeping most taste and nutrients.

I love summer squash. I have planted Early White Bush Scallop Squash in My Vegetable Garden. I have limited space, so I tried to find the bush variety. I like to stirfry this "pattypan" squash (another name for the white scallop) in a skillet with onions and butter.
