    I will also say that summer squash is overlooked and it is a favorite of mine too. We have many choices and you have lot of good ideas for its preparation. Angel blessed.

    Reading about your Summer Squash just reminded me, I have squash in the fridge. I usually steam, and have prepared with rice. Got some of those acorn ones, use to do them in the microwave, but can't remember for how long. It's autumn here, but the squash is delightful!

    I don't remember ever seeing a squash back in Russia where I grew up, so it was a brand new discovery for me in the US. Now I love squash, so delicious!

    I grew Uchiki Kuri Squash for the first time this yeat. Very east it was too. The hardest part is trying to find what to do with them. Thanks for the simple combination ideas.

    Eating your veggies is good for you. You might as well eat veggies that taste good like summer squash.

    We overplanted squash last year and fed the whole neighborhood all summer lol Those things get out of control - fast! I didn't believe a friend who said that in his old town if you left your car with the window open you'd come back and find it full of squash from people trying to get rid of theirs. Now I do, we might have resorted to that too given half a chance :)

    We steam ours with a little lemon pepper and also make zucchini bread to freeze for the rest of the year. We tried freezing zucchini by itself too and it was 'ok' for around a month or two, not perfect, but usable.

    We're just about to hit Summer here in Australia and already we have harvested a small mountain of zucchinis from our garden. My children are not so keen on them, but my husband and I love to eat them.

    We like Summer squash & zucchini sauted with garlic & onion. Then we add a little cooked bacon and top with grated mozzerella cheese. We put it in the oven just long enough to melt the cheese a bit. It's really good.

    I agree, squash is good and good for us. We always have a lot of squash left over for the winter. It stores really well in a cool, dry place. Last year we changed our spot and lost most of it to mold and rot. This year we'll put it back to the fruit room where it did well. I really enjoyed this lens. 5*s for sure!

    I love summer squash. I have planted Early White Bush Scallop Squash in My Vegetable Garden. I have limited space, so I tried to find the bush variety. I like to stirfry this "pattypan" squash (another name for the white scallop) in a skillet with onions and butter.

    Summer squash (e.g., zucchini), is good raw in salads. My favorite way, though, is sauteed in olive oil with a little seasoned salt and garlic.

    Raw winter squash would be, um, interesting....

    Hi Joseph: Tasty lens! I love to add mushrooms, a touch of olive oil, garlic, and a touch of salt to tiny yellow squash and zucchini. We grow yellow squash in our garden every summer. ~Music Resource~

    one time my wife tried experimenting on her summer squash style of preparing and cooking it and it taste really good but the sad thing about it is that he wont tell me what she added on those ingredients.

    I love summer squash! I put squash, onion, bell pepper and mushrooms in a microwave container and seal with wrap air tight. no water. yummy!
