Sunflowers Make Me Happy.

Bright and cheerful, the sunflower is a happy flower. Named Sonnenblume in Germany, Girasol in Spain, or Tournesol in France, the birds don't care, they love the seeds anywhere. Twenty years ago, Van Gogh's sunflower art painting (Vase of 15 Sunflowers) sold for a cool 39 million at Christie's auction in London! That was in 1987, and with new estimates for inflation, those sunflowers are now worth 71 million.

Sunflower Photo Slide Show at Flickr: 112,363 beautiful photos of sunflowers at Flickr in this slide show. Beautiful bright exquisite photographs of all kinds of sunflowers captured by a variety of photographers. I watched for about 10 minutes and felt uplifted and refreshed. I put it on pause for later. I could not believe the abundance of this earth regarding just this one flower. Such variety and beauty. So many seeds to munch!

The history of the sunflower (Native Americans in North America and Russians commercially). Wonderful FAQ (the largest head was 32 inches!) There is a great oil chart - showing mono/poy/unsaturated oils. There is another great chart of which birds prefer which seeds. A huge nutritional section with recipes and dietary info. A sunflower magazine.
Sunflower Greens Sprouting: Sprout People has an incredible website about sprouts.
Sunflower seeds for sprouted greens are the small pure black oily seed. To me, the only reason to only use those, was because the seeds had enough strength to push the hulls off, [without growing a deep root]. (Even so, I always had to manually remove some hulls).
This link is for growing 3-4 inch greens.
(An easier way, I came upon, was letting my sunflower heads go to seed and letting the birds have their way with them. They dropped hundreds of seeds which sprouted in groups every week. I went outside with scissors and cut little bouquets for salads.)
Sunflower greens have a potent flavor and are great on sandwiches. You can also buy sunflower greens in markets. They don't last too long in the fridge. (3-5 days) But if you keep them nice and dry, they will maybe last 5 days.

Growing Sunflowers from ... Sunflower Seeds!

The most important thing for growing sunflowers is full sun. While they like fertile soil, they can grow relatively well anywhere and can be seen wild along sunny roadsides. There are several varieties the sunflower. Named Helianthus annuus, it is in the Asteraceae plant family.

Sunflowers will follow the sun (called heliotropism). In the morning they are facing east and follow the sun as it moves across the horizon to the west. Then each night, they slowly turn back towards the east. So if you are planning a sunflower garden, you want to figure out your directions, so when you look at them in bloom, they will not have their backs turned to you.

Sunflowers also come in all sorts of sizes from dwarf, some are more bushy, to others gargantuan tall. So again plan your garden for size and color.

They sprout in 1-2 weeks, sometimes sooner. Soil is best if it is "holds moisture and good drainage"... how we all wish all soil acted. Sunflowers are extremely hardy if they have full sun (6 hours per day at least).

You can pre-sprout seeds in a jar or with a moist paper towel in a dark place and then plant in the ground about an inch deep and at least a foot apart. (Use your judgment based on the seed kind. The dwarf can be a bit closer, the giants a foot and a half apart.) The little sproutlet with the outer husk gets planted all together. You use less seeds this way, and can place them more accurately, and birds can't dig them up.

Sometimes as they grow large with heavy heads, you may need to stake them if it's very windy.

If you want to harvest big seeds from the mature heads, choose a sunflower cultivar specifically from the seed catalogue for that purpose. You can eat any of the other seeds, but the colored ones, and dwarf varieties are much smaller. The dwarf varieties can be planted in a pot. They are charming.

If you plan on harvesting the seed heads when mature (they will brown and begin drying out), cut the entire head and .. lay it so it is has air circulation around it (and the will not get moldy) to dry out for a couple of weeks. The dry seeds will then just rub off and pop out. Save some for the next planting, the biggest healthiest dryest. The rest are ready to be sprouted, or roasted, or fed to birds.
