Sweet Potato Casserole Ingredients

Ingredients for Sweet Potato Casserole Recipe:- 3/4 cup butter, softened
- 3 cups cooked mashed sweet potatoes
- 1 cup Orange Juice
- 2 tablespoons Orange Peel Extract
Topping for Sweet Potato Casserole Recipe:
- 1 teaspoon vanilla
- 1 cup milk
- 1 cup brown sugar
- 2 tablespoons butter, softened
- 1/2 cup chopped pecans
- 1 bag mini marshmallows
Sweet Potato Casserole Directions
How to fix Sweet Potato Casserole Recipe
- Peel the sweet potatoes, wash and cut in half.
- Boil Sweet Potatoes in large pot on stove for approximately 20 minutes (after boil starts) or until they fall off a knife.
- Pull Sweet Potatoes from water and allow to drain.
- In large mixing bowl, combine butter, orange juice, orange peel, and potatoes, and mix for 3 minutes.
- Prepare topping while potatoes mix... Combine milk, brown sugar, butter, and vanilla in microwave bowl and microwave for 1 1/2 minutes or until mix is thickened.
- Spread potato mixture in casserole dish and sprinkle pecans on top, then add topping mixture evenly over the top.
- Bake at 350° for 35 minutes.
- Remove from oven and add marshmallows to top, bake another 10 minutes.
- Serves 6.

- I'm looking around for recipes for Thanksgiving side dishes, because we have to bring something to dinner this year. We've been invited as guests for several years to the same place and were always told--ordered--not to bring anything. But now the hostess is getting older and can't cook as much, so we're all bringing something. This sounds like a yummy possibility. I'm putting together a lens of candidates, featuring the recipe lenses on it, so I'm adding this one.

- Ah, I have a sweet potato casserole story for you. When my son Colin was 3 years old, I went into labor on Thanksgiving morning with my daughter, Molly. I went ahead and made a lovely Thanksgiving dinner just for the three of us (me, hubby and son) that included a yummy sweet potato casserole much like this one. Colin LOVED it and ate heartily. It got to be about midnight and about time to head for the hospital, and Colin was crying that he felt bad, that his tummy hurt. My husband was trying to console Colin while we tried to decide whether to take him to the neighbors as planned or to bring someone to the house to babysit in case he was sick. We called a dear friend (had to be to come to the house with no warning at midnight on Thanksgiving) to come over and stay with him. Later at the hospital, I mentioned it to a nurse, who asked "Did you have sweet potatoes today?" Hmmm. Apparently sweet potatoes can give people horrible gas if overeaten, and poor Colin had fallen victim.
