Sweet Potato Casserole RecipeIngredients for Sweet Potato Casserole Recipe:
  • 3/4 cup butter, softened
  • 3 cups cooked mashed sweet potatoes
  • 1 cup Orange Juice
  • 2 tablespoons Orange Peel Extract

Topping for Sweet Potato Casserole Recipe:
  • 1 teaspoon vanilla
  • 1 cup milk
  • 1 cup brown sugar
  • 2 tablespoons butter, softened
  • 1/2 cup chopped pecans
  • 1 bag mini marshmallows

How to fix Sweet Potato Casserole Recipe

How to prepare this Sweet Potato Casserole Recipe
  • Peel the sweet potatoes, wash and cut in half.
  • Boil Sweet Potatoes in large pot on stove for approximately 20 minutes (after boil starts) or until they fall off a knife.
  • Pull Sweet Potatoes from water and allow to drain.
  • In large mixing bowl, combine butter, orange juice, orange peel, and potatoes, and mix for 3 minutes.
  • Prepare topping while potatoes mix... Combine milk, brown sugar, butter, and vanilla in microwave bowl and microwave for 1 1/2 minutes or until mix is thickened.
  • Spread potato mixture in casserole dish and sprinkle pecans on top, then add topping mixture evenly over the top.
  • Bake at 350° for 35 minutes.
  • Remove from oven and add marshmallows to top, bake another 10 minutes.
  • Serves 6.

    One of my favorite reasons to love Thanksgiving even more. We don't normally do Thanksgiving as my son is allergic to turkey so we always eat out but I do have to make sweet potatoes every year no matter what. :) Thanks for the new recipe.

    Hi, I'm back. You don't have your contact link turned on so I'll leave a message here. Just curious... is there supposed to be flour or some other thickener in the topping? It didn't thicken for me. Also, did you use yams perhaps? The photo above is much more orange than our dish turned out to be. (Actually, the sauce made ours more of a tan color.) In the end, the sauce remained liquid and so the dish became like a soup. The taste was okay, but the consistency ... well, it didn't work. So I'm wondering if something was missed. How did it turn out for you?
