Sweet Potato Cupcakes - Yum!
These cupcakes will be both unusual and strangely familiar at the same time, as well as being a fun way to introduce your family to different ways to enjoy this colorful, delicious, very nutritious and sadly under-appreciated vegetable [technically, it's a tuber].
So, preheat the oven, pull on your apron and let's get started.

Choosing Your Sweet Potatoes
from a can, boiling, steaming / microwaving or roasting?
Like any recipe, the quality of the ingredients are paramount.
- So, if it's not sweet potatoes season or your local supermarket doesn't sell imported sweet potatoes, then feel free to use tinned sweet potato
- If you can purchase sweet potatoes fresh, you can boil them - but you're going to lose some of their delicious, natural flavor
- Steaming the sweet potatoes over boiling water or microwaving them are both very effective but until you're at ease with cooking them that way, you will need to check them regularly. Both methods seem to have a sudden cross-over point where the sweet potato's cell walls seem to collapse and the result is often a disappointing sweet potato mush
- My favorite method for cooking sweet potatoes for cupcakes is baking them, because it intensifies the flavor and there's much less likelihood of them turning to mush. For more info about how to bake sweet potatoes, see the video in the module directly below...
Sweet Potato Cupcakes

- Serves: makes 24, serves?
- Prep Time: 45 minutes
- Total Time: 1 hour & 5 minutes
3 eggs
1 17.2-oz. can sweet potatoes (unsweetened), mashed
1/2 tsp. vanilla
Ingredients
- 2 cups of all-purpose flour
- 2 teaspoons of baking powder
- 1 teaspoon of ground cinnamon
- 1/2 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1 cup of butter
- softened
- 1 - 1/2 cups of sugar
- 3 eggs
- 1 18-oz. can of sweet potatoes
- or cooked sweet potatoes
- 1/2 teaspoon of vanilla extract
Instructions
1: Preheat oven to 350 degrees F.
2: Line twenty four 2-1/2-inch muffin cups with paper bake cups, then set aside
3: Stir together the flour, baking powder, cinnamon, baking soda & salt in a mixing bowl, then set aside.
4 In a large mixing bowl, beat the butter with an electric mixer on medium to high speed for 30 seconds.
5: Add sugar to the butter and beat on a high speed until the mixture is light and fluffy, which should be about 2 minutes.
6: Add the eggs - one at a time - beating on low speed after each addition until they are all well combined.
7: Add the sweet potatoes and the vanilla, beating until combined.
8: Add the flour mixture and beat until combined - the batter will be thick.
9: Divide batter evenly among prepared muffin cups.
10: Bake about 20 minutes or until the tops spring back when lightly touched.
11: Cool in the pan on a wire rack for 1 minute. Then remove the cupcakes from the pan and cool completely.
