Sweet Potato Cupcakes - Yum!

Most traditional Thanksgiving meals include some form of sweet potatoes, often a sweet potato casserole. This year, why not think outside the box and surprise everyone with sweet potato cupcakes?

These cupcakes will be both unusual and strangely familiar at the same time, as well as being a fun way to introduce your family to different ways to enjoy this colorful, delicious, very nutritious and sadly under-appreciated vegetable [technically, it's a tuber].

So, preheat the oven, pull on your apron and let's get started.

Choosing Your Sweet Potatoes

from a can, boiling, steaming / microwaving or roasting?

Sweet Potatoes For Roasting

Like any recipe, the quality of the ingredients are paramount.

  1. So, if it's not sweet potatoes season or your local supermarket doesn't sell imported sweet potatoes, then feel free to use tinned sweet potato

  2. If you can purchase sweet potatoes fresh, you can boil them - but you're going to lose some of their delicious, natural flavor

  3. Steaming the sweet potatoes over boiling water or microwaving them are both very effective but until you're at ease with cooking them that way, you will need to check them regularly. Both methods seem to have a sudden cross-over point where the sweet potato's cell walls seem to collapse and the result is often a disappointing sweet potato mush

  4. My favorite method for cooking sweet potatoes for cupcakes is baking them, because it intensifies the flavor and there's much less likelihood of them turning to mush. For more info about how to bake sweet potatoes, see the video in the module directly below...

"[What's New, Cupcake?] offers some of the cutest designs with clear, easy to follow directions. I really love the fact that you don't use any fondant. It's all done with candy and frosting. If I could give it 10 stars I would"
Amazon reviewer Rachel Andrew

"[What's New, Cupcake?] makes it easy for an amateur to look like a pro. I have made several of the cupcakes in this book and they have all turned out great!"
Amazon reviewer Leah Gordon

"I am not a fan of decorating cupcakes - the area to work within is far too small and the work is labor intensive...[but] while reading through [What's New, Cupcake?] for the first time. I found myself saying over and over 'I can do that'. Each page had detailed instructions and fantastic photos to work from.

I am very happy with my purchase and know I will get years of use from this book."

Martha Stewart's Cupcakes: 175 Inspired Ideas for Everyone's Favorite Treat

Martha Stewart's Cupcakes: 175 Inspired Ideas for Everyone's Favorite Treat

Amazon Price: $11.79 (as of 06/03/2012)Buy Now

"I love Martha Stewart's cupcake book!...[It's] is chock full of wonderfully creative cupcakes for all seasons, holidays and special occasions!

I've already made the shark and the beach parasol cupcakes for my son's ocean-themed birthday party and the beautiful butter-cream chrysanthemum cupcakes for a baby shower."

Amazon reviewer Heather Isaac

"Martha Stewart's Cupcakes is an amazing cookbook filled with 175 different cupcake recipes.

Going beyond just plain chocolate or vanilla, Stewart's cookbook contains many unique but delicious recipes for any occasion e.g. Boston Cream Pie cupcakes, Peanut Butter & Jelly cupcakes and Pistachio cupcakes - which are all pretty unusual.

My personal favorite is the Mocha cupcake because I love the amazing combination of chocolate and coffee in both the cake and the frosting."

Amazon reviewer Lauren E. Volkmann

"I recently got the cupcakes book and I've tried two recipes so far. The Cookies & Cream Cheesecake cupcake and the Red Velvet cupcake...

...They were both very easy to make and [I] have [received] great reviews from friends and co-workers. The Cookies & Cream Cheesecake cupcake is no fuss and visually appealing, while the Red Velvet cupcake has a great texture and taste - even without the icing."

KitchenAid Classic 250-Watt 4-1/2-Quart Stand Mixer, White

this stand mixer is a must-have for any home baker - I use mine all the time!

KitchenAid K45SS Classic 250-Watt 4-1/2-Quart Stand Mixer, White

Amazon Price: $222.22 (as of 06/03/2012)Buy Now

"I've only had [the KitchenAid Classic] for about a year...it was a real splurge at the time we purchased it but it has turned out to be well worth it.

Before the Kitchenaid, I didn't do much baking...but... there is something about using the right tool for the job and I've found no tasks that one might consider using a mixer for that the Kitchenaid doesn't excel at.

But it's especially good for baking and once you start using it, you'll have your oven running a lot more than you used to."

Amazon reviewer R. D.

"I have owned my KitchenAid K45SS for almost 12 years and it has worked hard and performed well consistently without need of repair - it can handle the toughest kitchen jobs without over-straining its motor.

I have used it to mix batters and doughs, to grind grain and coffee, to shred cheese and veggies and grind meat and stuff sausage. I have tested it to the max and it has never let me down."

Amazon reviewer Marilyn Nugent

"My mother, grandmother and aunts have all owned their KitchenAid mixers for over 30 years - even with frequent use, not one of them has experienced any sort of mechanical problem."

"I love [Hello, Cupcake!]; the instructions are very clear and easy to understand but the pictures are the most delightful I've ever seen in a cookbook!"
Amazon reviewer GMDCGG11

"[Hello, Cupcake!'s] step by step directions are very detailed and the authors are geniuses at figuring out how to re-purpose food items to make bowling pins, penguins, turkeys, bugs and wreaths.

Templates are provided for design components that don't come ready-made, like the drumstick bones for the faux-TV dinner, easily the cleverest idea in the book.

Since I'd never make cupcakes not from a mix, I'll take the authors' word for it that the scratch recipes they provide are delicious but their recommendation of adding an extra egg and using buttermilk really does make a big difference to regular old cake mixes."

Top 500 Amazon reviewer Jody

"I brought 8 dozen cupcakes to my sister's baby shower...and people were floored! They thought I had bought them at a bakery...

...Yes they were a little time consuming, but why do you think the cupcakes at designer bakeries are so expensive?

I had at least 20 people tell me I needed to sell them and a few others asking for contact info so I could do the cupcakes for [them]."

Amazon reviewer Michele Renner
